    I just chop mine and freeze haven't had problems.

  • Mushroom & Brie/Camembert baked tater filling serves 4

    15g butter
    1 small onion finely chopped
    1 clove garlic - crushed
    200g mushrooms (or more if greedy)
    1 tbsp worcester sauce
    salt & pepper
    150 g brie (or in proportion to mushrooms)
    4 baked taters
    2 tbs snipped fresh chives
    Melt the butter in a frying pan & fry onions until soft. Add the garlic and mushrooms and stir over a low heat for 5 mins or until the mushrooms are soft.

    Stir in the worcester sauce & seasoning. hop the Brie and stir into the mixture until the cheese just begins to melt.
    cut the potatoes in half and scoop out the flesh, leaving a thick shell. Mix the flesh into the mushrooms and season well with salt & pepper

    Spoon back into the potatoes and serve hot sprinkkle with snipped chives.

    Alternatively skip the last two instructions and just pile the mushroom mix into the middle of split baked taters

    So far I've only ever used mushrooms in chicken casserole and omelette.

    I've got some chestnut mushrooms, can I use them in the same way?

    I second Mushroom Stroginoff - in fact im having it for tea tonight with jacket pots and salad. As with lots of things tends to taste better the day after making it - freezes well too. yum. (wish I had too many Mushroms)
  • hi peps would appreciate your ideas on this one. Preferably before hubby gets home ...it was a bargain (says i) oh god (says he).
    I needed spuds and was dropping himself off at the bus stop right near the saturday market. hum i thought i 'll get a sack while i'm here. unfortunately i also got 3lb mushrooms £1.50 4lb onions £1.00 3lb carrots £1.00 a cabagge and a cauli £1.00 by the way the spuds were £6.00 so how to conceal the stuff is my main purpose because my usual trick is to leave it to fester for a month or two and then chuck it all out. i usually use about half of any of it.

    Yum yum - mushrooms!You could make mushroom omlettes with some, would make a nice tea with some cheese in there too. (Our tomorrow night's tea, by coincidence). Fry them off gently in a little butter to have on toast for brekkie tomorrow as a treat. Fry them off gently in a little butter with some garlic added as a vegetable accompaniment to a main meal.

    Some small mushrooms could go whole into the pot with potato, carrot, onion, other stew veg, stock and whatever meat you have handy to make a tasty stew for one night in the week. Chuck the lot in the SC in the morning and two for the price of one - a delicious meal and a wonderful smelling house by evening! :rotfl: Cabbage wil go with carrot and onion to do a stir fry of some form of coleslaw, and frankly I think there is little better use for a cauliflower than that good old fashioned favourite cauliflower cheese - I usually do mine with macaroni and some chopped cooked bacon stirred into the sauce.

  • Mushroom soup.....

    Make with thyme and some garlic, a splash of white wine and some good stock.

    Fry off mushroom with diced onion and garlic, add the thyme

    Slosh in the wine and reduce, add the stock and simmer for 20 mins.

    Take off the heat and add some double cream (yum) And season with salt and black pepper


    Blitz with stick blender. Can be chilled for a few days and even frozen.
