My Mum used to make this recipe a lot, I loved it but hardly ever make it now as no-one but me likes mushrooms, and it seems self indulgent.
Fry some diced onions until they are soft, add diced mushrooms and continue frying until they are soft too, then stir in some cream and, if you like it, grate some fresh nutmeg into the mixture and season to taste. I must admit on the odd occasion I have made it for myself, and I have no cream in, I have substituted some evap for the cream and thickened the mixture a little with cornflour. It is nice on toast, or is good as an accompaniment for lots of other things.
Does anyone grow their own mushrooms these days? Years ago you could buy a `mushroom log` that you then watered and kept under the stairs or somewhere dark I think. Not seen those advertised for yonks now (How time flies).The more I see of men, the more I love dogs - Madame de Sevigne0 -
When I told my kids about the mushroom logs they thought it was hilarious. I began to doubt my own sanity, so I looked on the net and found a company who are selling these very things. They seem to be have posher mushroom spores now (shiitake and oyster) but you can still get them. Hah!The more I see of men, the more I love dogs - Madame de Sevigne0

MUSHROOM CURRY
Serves 2
INGREDIENTS
250g of closed cup mushrooms
2 cloves of garlic
2cm (1 inch) piece of fresh ginger
1 onion
4 tablespoons of sunflower oil
1 teaspoon of chilli powder
½ a tablespoon of garam masala
1 teaspoon of ground turmeric
125ml of water
142ml pot of yoghurt
METHOD
Wipe the mushrooms clean. Cut the ends off the stalks and chop them into halves or quarters depending on their size. Peel the garlic and chop it into tiny pieces. Peel the ginger and chop it into tiny pieces. Peel the onion and chop it into tiny pieces.
Put the oil into a saucepan on a medium heat. Put the onions, garlic and ginger into the pan and fry for 3 minutes until it is golden. Stir frequently to stop it sticking.
Add the chilli, garam masala and turmeric and stir. Add the mushrooms and water, and stir. Bring to the boil, then turn down the heat until it is just boiling (simmering). Put the lid on and cook for 10 minutes. Check the water level from time to time and top up if it starts to dry out.
Add the yoghurt and mix thoroughly. Continue to cook for 10 minutes, stirring as the mixture boils, until the sauce has reduced.
ADDITIONS & ALTERATIONS
Use button mushrooms instead of closed cup mushrooms.
For Mushroom Dopiaza, add another onion, sliced into rings, at the same time as the mushrooms. Dopiaza means ‘two onions’ and is a curry with lots of onion, some added part way through cooking. According to legend, it was created by accident, when a maharajah’s cook inadvertently put a second lot of onions into a curry. Fortunately, the maharajah thought this ‘new’ dish was delicious and everyone lived happily ever after.The acquisition of wealth is no longer the driving force in my life.0 -
I got 6 lb button mushrooms cheap at Tesco today. They are not at all past it but I'll need to use some of them in things I can freeze. Any ideas what? We are veggies by the way. I am planning on mushroom en croute for one day and mushroom soup for another, but I figure that still leaves me with 2-3 lb to use up.

Have very little money at the moment and have been trying to use every last thing we have and not throw anything out, have just bought shopping for 2 adults 4 children to hopefully do us around 9 days and it came to £40 inc things i have and a good meal plan in place. however i have a big tub of mushrooms i planned on using but still not got round to it, they are looking a bit sorry for themselves me,DD2 and DS2 have just had mushrooms on toast but there are still a lot left. any recipes for mushroom soup or other ideas on how i can use them up and not throw them out???
also thanks to everyone on here as i dont thik i would have been able to get my shopping for £80 a few weeks ago!!!! all i can say is thank goodness for lentils:D:D:DWhat's for you won't go past you0 -
We used a heck of a lot of mushrooms last nite in a mushroom risotto using pearl barley instead of rice the recipe was on the pack of pearl barley and using very few ingredients. I were skeptical at howit would taste but it was wolfed down by all five of us with kids asking for more.:j Was married 2nd october 2009 to the most wonderful man possible:j
