    I'm starting this because I figure I waste £10 a week on bought sandwiches - usually £2.50 a time - when £2.78 covered my bread and ham for about eight days sandwiches yesterday. (More than a week!)

    I read on the forum somewhere, not sure if this thread, about freezing ham sandwiches. I think this will work well for me for starters. I remembered it this morning - although I hadn't frozen the one for today - and added home grown fresh rocket from my window box.

    One of my favourite ones from the sandwich lady is smoked salmon cream cheese and rocket. I know the rocket won't freeze, but does anyone know about soft cheese, i.e. philadelphia or a substitute, and salmon?

    Does anyone have any other suggestions? I would like to stick to sandwiches for the moment and preferably ones I can freeze, as that seemed such a perfect idea.

    I won't be much help I'm afraid as I have sandwiches about 4 times a year!!! Never heard of anyone freezing sandwiches before...

    Is it because you are shopping for one and the bread etc will go off? If so, you could always freeze bread and butter in portions of two pieces, then take out on the morning, add your filling and it'l defrost through the morning? Does that help? x

    Hi all

    Another week begins! I shall do my four days again this week and have my £1.25 meal on Friday as usual (gotta love subsidies!)

    This week I have a bulgar wheat mix:
    - Bulgar wheat cooked in stock cube
    - Cucumber
    - Tomato
    - Baby Plum Tomatoes (got 'em reduced)
    - Red pepper
    - Yellow pepper
    - Fresh parsley
    - Lemon juice
    - Red chilli
    - Salt
    - Black pepper
    - Spring onion

    That's four portions, Mon - Thu. Then to each one I've added half a pot of either M&S Feta in Harissa dressing, or M&S Goats Cheese in Caramelised Onion dressing. Will alternate them! Today is Feta!

    With a Yeo Valley Fat Free Organic Probiotic Vanilla yoghurt!!! (that's a mouthful... fnar fnar)

    Also made breakfasts this week, Brown Rice breakfast which keeps me nice and full till lunch so hopefully no snacking! x

    That is a thought, just freezing the bread.

    It is because the bread would go off. It's also because I am so bad at getting up in the mornings and to save time. (I am always running late.)

    Today I had half a small(ish) quiche that I got in the bargain bin in Tescos reduced to 50p with salad. Will have the other half tomorrow. Woks out about 35p a lunch:j

    hi pee,
    you can freeze salmon just fine, not to sure about the cream cheese bit, what I have been known to do is have really small amounts of things in the freezer, small pots of pesto or lentil pat! just enough for one serving, They defrost by lunchtime in tiny amounts. I also cheat by having a small jar of jam in my bag at all times, along with a one serving sachet of coffee, that way a forgotten lunch still on the worksurface just means nipping to the shop for a roll or two, much cheaper than a sandwich.
    A friend of mine also freezes chedder cheese and pickle sandwiches she says they are fine, or just cheese.

    Today I had a small amount of pasta salad with some beetroot salad mixed together,,,,,have to make up some more of the lentil pat! as I only have enough for one day left, so it will have to be marmite and cucumber sandwiches tomorrow, with a piece of fruit.

    Beans on toast-definitely making use of the new work toaster!!! I so nearly caved today as couldn't be bothered to root through my over-full freezer but was glad to find a tin of beans and two slices of bread. Half the beans left for Monday now :)

    i only have 3 days left to work inMay! id like to start this challenge though as its a fortune to eat from our local cafes. So i plan to do 3 days for May!

    Had to change my goal from 15 to 14 days as forgot I have the 31st off, inadvertently giving myself a 4 day weekend instead of the 3 day BH one!!

    This week I have Gigantes Planki which I batch cooked on the weekend - link.

    I didn't know how serve it, so today I did a portion with a portion of cous cous cooked in a veg Oxo cube, some leaves and a tomato cut up. I cannot describe how absolutely gorgeously yummy it was!

    I also have my last Yeo Valley fat free vanilla yoghurt - no more yoghurts now till payday!! and also 5 lychees left over from weekend which I liberated from Mr T's for 48p!
