Hi all
Sorry didn't update for a few days... this week I have made a 4 portion batch of summer minestrone soup... involves broad beans, mange tout, and teeny pasta shapes (which I found in Tesco for about 70p and only used 2/5 of a bag, woo hoo!), as well as various other bits of veg/flavourings.
However today I'm having it for tea instead of lunch, and my lunch today instead is:
- leftover chicken chunks (pack of 2 free range chicken breasts which should have been £7.09 but I paid £2.84 on Sunday as Sunday was their Display Until date, and yesterday was their Use By Date - this is the last of it now!) which was marinated in a mix of harissa, lemon juice and olive oil and then I put on kebab skewers and grilled... yum yum yum, good hot and cold!
WITH
- half a bag of "Naked Little Mixed Leaves" (90p per bag, currently 2 for £1 in Tesco)
AND
- Quinoa (cheap as chips!) cooked in veg Oxo cube, with spring onion, lemon juice and parsley mixed through
AND
- Roast Red, Yellow and Green Peppers (£1 for a pack of three in Asda as opposed to £1.65 in Tesco), and Tomatoes - actually I lied, they're not roasted, they're grilled with salt, pepper, chilli flakes, drizzle of olive oil and bit of crumbled veg Oxo cube..... but it's the same effect!
Now that sounds like a lot of food, but actually it's not, is a small plastic tub - smaller than a Tub-It :A
Soup for the rest of the week, just in case I forget to post!

Hello All,
Same as yesterday for me: bagel for breakfast, sandwiches for lunch, 2 cans and a packet of crisps for a snack.
Enjoy lunch when it comes!

Hey all!
Got leftover homemade Pathia curry for lunch today, my partner is an amazing cook and this is what i was treated too last night when I came home from work. Very spoiled!
Enjoy lunches everyone. x0 -
i like reading these threads, very inspiring - thought i'd add some support.
elsiepac - lovng your ideas, thank you.
i HATE paying money for lunches - so make sure i always have a supply of non-perishables in my locker bananas and apples and yogs in fridge for emergencies. i would rather have crisps/banana/yog on the odd occasion than buy anything! i also drink tap water too.
i think that food and lunches is the one easy area to save money on.
Monday i had a large muller rice (25p) and a banana (10p) and a couple of fake hobnobs.
yest/today it's mixed salad (lettuce, radish and spring onions free from garden) with cheese, yog (10p), banana and fake hobs for snacking if required.
i really need to start taking leftovers from freezer as it is truly chock-full. i have to stop buying the yellow-whoopsies for a while and actually EAT some of them:rotfl:
have a good day all x0 -
that was a near miss - almost forgot to sort anything out to bring today but with 5 minutes to go before I left the house knocked up a doorstep sandwich of marmite, cheese & cucumber. So I havent succumbed to the shops yet this month! saving me petrol as well0
