Hmm...20 working days this week. I've already failed this completely this week. Problem is I'm trying to be a bit healthier, so I've cut out bread completely. Any suggestions for lunches that don't go on sandwiches? Being in Stoke, oatcakes may be an option (proper oatcakes, not those strange scottish biscuit things), but I'm not sure if they're any healthier than bread!0

Me too, trying to not eat bread.
I'm fed up- of fish / salad / rice combo though. Usually it's tuna, or tinned salmon. Think I'm going to make some soup and flask it. We got our microwave taken away at work by the health and safety people - before that I used to just bring leftovers from tea.0 -

How about a large batch of soup made on a sunday. Then take that everyday with a yoghurt and a bit of fruit to fill you up

Hi all
Today I had "Spring Green Fattoush" from BBC Good Food website:
Broad beans, cucumber, feta, mint, parsley, chives, lemon juice and zest, black pepper, salt, chilli flakes, olive oil, pitta bread toasted and torn up and mixed in.
And a Yeo Valley Coconut yoghurt :A
Ideas for non bread or fishy type lunches:
1. Choose a grain and cook it and let it go cold: Quinoa, Lentils, Barley, Millet, Cous Cous, Bulgar or Buck Wheat etc
2. Choose a bean and drain it and rinse it: Kidney, Cannelini, Haricot, Flageolet, Mung, Borlotti, Chickpeas etc
3a. Choose a load of salad veg: Tomato, Red Onion, White Onion, Cucumber, Celery, Yellow/Red/Green/Orange Pepper, Edadmame Beans (that you boiled for a few mins and let go cold), Radishes, Carrot etc
OR
3b. Choose a load of veg to roast in a tiny bit of oil and chilli and let go cold: Red/Yellow/Green/Orange Peppers, Red/White Onion, Courgette, Aubergine, Fennel etc
4. Choose some fresh herbs and chop roughly: Parsley, Mint, Coriander, Basil, Chives, Dill etc
5. Choose some other flavours: Black onion seeds, coriander seeds, fennel seeds, cayenne pepper, smoked or normal paprika, Tabasco sauce, any dried herbs etc
6. Mix all above together, and add a tbsp olive oil, juice of a lemon (and zest if you like), a chopped fresh chilli and mix through
This is pretty filling depending on your quantities, but if you need more why not try chopping some goats cheese or feta through it, or even better, grill some halloumi pieces and add when they've cooled! Easy to do in large batches - a portion would usually be 50g of whichever grain and half a tin of beans, plus unlimited quantities of veg.
