I love my Be-ro book. I use a very worn 19th edition inherited from my mum with her writing on etc. I've also got the first metric one but I use imperial measurements. I have noticed though that the cakes in my edition that use one egg use two in the later one so I presume mine dates from post-war rationing LOLBut I'm going to say this once, and once only, Gene. Stay out of Camberwick Green0

1/2 oz or 3tsp dried yeast & 1tsp caster sugar or 1 oz fresh yeast
3lb Be-Ro plain flour (save 1 oz for dusting)
1 1/2 pints warm water (1 part boiling, 2 parts cold)
4 - 6 level tsp salt according to taste
1 1/2 oz lard (optional)
1. Reconstitute dried yeast in 1/4 pint of recipe warm water with sugar until frothy (page 59 - ooh-er), or cream fresh yeast with a little warm water.
NB: If anyone would like to know what happens on p59 of the 34th edition, let me know.
2. Mix flour and salt in warm bowl. Rub in lard (optional).
3. Add yeast liquid and remainder of water to flour, mix until dough leaves bowl cleanly.
4. Knead thoroughly on a floured surface (about 10 minutes).
5. Divide and shape dough. Place in warm greased tins, pressing well into corners, or on to greased baking sheets. Recipe will make two large or four small loaves.
6. Cover with cloth and leave to prove in a warm place for 45 - 50 minutes until dough reaches top of tins.
7. Bake in hot oven (425 - 450 F, gas mark 7 - 8). Rolls will take 10 - 15 minutes. 1lb loaves 35 - 40 minutes. 2lb loaves 45 - 50 minutes.
I love this bread.
There is also a batter method.
Forgive me for raising a post from 2005, but I've just read all the be-ro thread & am champing at the big to get my cheque off & get my book! Why are they still in the dark ages with cheques!
The bread recipe above is puzzling me though, I'm used to using soft flour to make soda bread, without yeast but baking powder instead.
But the recipe above uses soft flour & yeast?
I thought you had to use strong flour with yeast to make bread?0 -
Gosh I had no idea Be-Ro cookbooks were still being printed! I have an ancient one (edition number unknown as the cover has long gone!) which still comes out now and then when baking with the DGDs. Maybe it's time I invested in a new one!!"If you dream alone it will remain just a dream. But if we all dream together it will become reality"0

You don't have to use strong flour to make bread, usually use just plain and it makes good bread, especially rolls.Slimming World at target0 -

Ive just had a quick look on Ebay, they are going for £3/4/5 each, whats that all about them
I have no idea what the high prices are all about on ebay for these books... I just moved house and was sorting through my house to pack, and as i went along I listed lots of stuff on ebay - furniture and all sorts that to be quite honest would have gone down the tip as i had to be ruthless with this house move (not much storage space!)
anyway, so I had quite alot of these be-ro books - my nanna gave me them years ago.. most of them had duplicates of eachother... I listed all the duplicates and kept the rest for myself.... they have been selling like hot cakes! (scuse the pun!) They must be collectors or something that buy them?I listed them for starting bid of £5 and didnt really expect them to sell.... I nearly fell off my chair when I saw my 6th edition one sold for £35!! madness! Thats the earliest one I have... I have 11th 12th, 13th, 14th,15th, 16th, 17th,18th, 19th, 21st, 24th, 25th, and some 30 somethings.
I grew up with Be-ro books learning to ccok from them with my nanna.. and my mum... they are good books thats for sure!
