Good thread OP, I sometimes do salmon potato salad, which goes down a treat! Similar to Caitybabes recipe, but with potatoes instead of pasta.
Am wondering what i can do for dinner later, got 2 tins green peas, 2 tins sweet corn, 1 tin sausage. ThanksYou are 48% tight

Salmon loaf. Sorry no quantities as this is a dish my grandma used to make. Tinned salmon, finely chopped onions, breadcrumbs soaked in milk, beaten egg to bind - you can remove the bones and skin of the salmon if you wish or just mix everything together in a loaf tin and in a medium oven for 40 mins or so. Curried salmon pasta. Sounds rank and is hot, yes, but is actually delicious and you can use most non-root vegetables in it(broccoli, peas, sweetcorn, any peppers, spinach work best).
Loose recipe for 2 servings...
Soften 1/2 onion and 2 cloves garlic in butter, add tsp curry powder, tsp ground corriander, 150g dry pasta and enough water/milk(50:50) to cover pasta and simmer for 5 minutes.
Add one grilled, skinned, diced red pepper and asparagus, simmer for 5 mins.
Add tbsp flour and tinned salmon, extra curry powder/corriander/chilli powder to taste and simmer uncovered stirring for 5-10 mins until the sauce thickens.
You can cool fish cakes and use them in sandwiches/burger buns, thai style ones with mayo and sweet chilli are a personal favouriteLiving cheap in central London :rotfl:0 -

What else do you have?
How big are the tins sweet corn?
If you have a few extra ingredients do sweetcorn cakes (1 egg per big tin and enough SR flour to make the dough rollable in the hands, fry 1/2" patties in oil until golden each side) with sausage stew (diced sausage, onion and any mixed veg in gravy).Living cheap in central London :rotfl:0 -

Sausage and "pea" soup?
Drain the peas and sweetcorn, put them in a pan and just cover with stock. Chicken might be best. Blitz them and then start them heating to a gentle simmer. (If you like you could keep a desert spoon of each back and put them in after blitzing. That way you have some "solids")
Adding small pinches of things like garlic, ginger and mixed herbs will help - no biggy if you don't have them - and a pinch is all you need.
Chop most of the sausages into chunks - but keep one back and chop it really fine so you have "bits".
Add them to the pan and simmer for whatever the longest heating time is on your tins.

What a great idea, I am often sat here wondering what to do with certain ingredients that are about to go out of date!!
So here is one that I have, MIL for some reason randomly gives me some tins etc, not that I'm complainingFind uses for most things but have a tin of Red Cherries in syrup in the cupboard that has been there quite a while and probably past its best before by a good way
apart from a crumble/trifle type thing does anyone have any inspiring ideas???

polka my Mum and Dad used to make fishcakes out of sardines for my sister and I when we were little. They are yummy! Thanks, loving that sausage stew idea. Its 2 198g tins of sweetcorn. Got abit of pasta and baby potatoes around.You are 48% tight
