re the polenta I use it to make a chilli cornbread which freezes pretty well as well if theres any leftover to freeze
125g plain flour
125g polenta/cornmeal
1 tbspn baking powder
1/2 tsp salt
1 finely chopped chilli (or flakes)
5 sp onions chopped
2 eggs
125 ml milk (recipe says soured cream but milk works)
125 ml sunflower oil
grease 8 in cake tin and line with parchment
mix flour,polenta,baking powder and salt.
add chilli and onions.
in a jug mix together eggs,milk and oil.
pour wet into dry.
pour into tin.
bake 200c/400f/gmark 6 for 20-25 mins until lightly browned.
leave in tin til slighly cooled then cut into bars and serve.0 -

Use it like breadcrumbs to coat chicken or skinned sausages before cooking. You get a nice crispy coating, and kids love it
Chop set Polenta into small cubes and deep fry. Allow to cool and use as croutons in soups and salads
Add some flavour to your Polenta by adding grated Parmesan, fresh herbs, pesto or sun dried tomatoes during cooking

i've got some chicken thighs, the skin is on and there are bones in it, other than bunging it in the slow cooker, has anyone got any suggestions?0

You could mix some tomatoe ketchup, soy sauce and/or worcestershire sauce together then baste the chicken thighs, pop them in the oven. They are delicious! Have them with chips, potato wedges, rice, salad or anything really.0

If you have the marinade ingredients, Jamie's Piri Piri chicken from 30 Minute Meals is delicious. Even DH (who normally hates chicken thighs) loved it and asked for more. I didn't add the peppers as I didn't have any, and only used half the marinade. Froze the rest of it.0 -

what a success, had the fishcakes last night but not white potato I had some sweet potatos in.
I peeled and boiled the sweet pots, lightly mashed them with the salmon, mixed in some fried onion and a bit of english mustard and served with a mixed salad.
I loved them, OH would've preffered some more pots on the side but I didn't make them!
Any ideas for a tin of chick peas?

The obvious answer for what to do with chickpeas, would be to make hummus, but it depends on whether it's your cup of tea.
