What can I make with a load of kendal mint cake?

    Kendal Mint Cheesecake

    200g viscount biscuits crumbled
    50g melted butter
    350g Marscapone
    50g Caster sugar
    350g melted white chocolate
    350ml whipped cream
    Few drops of peppermint essence
    100g chopped kendal mint cake

    for the topping
    35g caster sugar
    175ml whipping cream
    85g good dark chocolate
    35g butter

Mix the crumbled biscuits with the melted butter.
Press the mix into the bottom of 6 10cm metal cooking rings placed on a tray. Leave in a cool place to set.

Beat the marscaphone & sugar until smooth.
Stir in the whote chocolate. Mix it well.
Fold in the whipped cream, peppermint essence & chopped mint cake.

Spoon the mix into the rings leaving a little room at the top.

    Topping

Biol the sugar & cream together for a couple of mins until it turns pale yellow.
Mix in the chocolate & butter stirring until melted.
Remove from heat & leave to cool.
Spread over the cheesecake & leave to set in the fridge.
Try to be a rainbow in someone's cloud.

Thank you so much that sounds amazing and I reckon would be a dinnerparty show stopper! Awesome :)

Any ideas for a tin of chick peas?
    :A

We're having VEGETARIAN BEAN CURRY for tea tonight which is very nice, and uses chickpeas. Looks and tastes a lot nicer than the picture! lol
and AFRICAN CHICKEN STEW is also very nice. I halve the ingredients as I'm only cooking for 2 people in this particular recipe. It calls for a chicken de-boned, and cut into bite size pieces, but I just use 200g diced chicken breast.

  • OOh great thread! I'm about to have to move out of my house for a while and need to clear out loads of stuff. In particular I have...

2 jars of olives; black and green

a load of digestive biscuits that are probably a bit soft for eating as biscuits. I dont want to make cheesecake as the cost of cheese/ cream is a bit prohibitive

Thanks in advance for your help!

I have a small amount of bolognese left from tea last night in the fridge as well as a piece of puff pastry - what do you think bolognese pasties would taste like?! I think they sound delish! :T

the other week we made pasties with leftover chilli - and they were lovely! In fact, DH cooked extra chilli last night so that we'd be able to make them again

For the last few months, I've been saving the dregs/crumbs out of my Bran Flakes and freezing, and I have quite a little bag full now.

I've no idea why, other than I felt sure they could be used for "something". Any ideas please?

Re the digestives - not very inventive I'm afraid, but they're very nice crumbled over the top of vanilla ice cream actually, topped off with chocolate sauce :)

You could make broken biscuit chocolate cake (my mum used to make it for all our birthdays and I buy in biccies especially to make it).

1lb biccies (can use a mixture of whatever you have in - I use digestives and rich teas in equal amounts)
    8oz sugar (white)
    8oz marg or butter
    4tbsp cocoa powder
    2 eggs (beaten)

    1. Break up all the biscuits into roughly 5/6 pieces each so they're not tiny but not big chunks.
    2. Melt sugar, marg and cocoa over a very slow heat, stirring until completely melted (in a very big pan).
    3. Take off the heat and leave to cool for one minute.
    4. Stir in beaten eggs.
    5. Add in the broken biccies and mix well.
    6. Line a roasting tin or cake tin (or any vessel!) with foil then presse the cake mix into the tin.
    7. Leave to set overnight in a cool place (it is better not to leave it in the fridge but if you're in a rush you could).

It doesn't look all that but it's bloomin tasty :)
