Should I just ride it out and wait for a court date, or would people suggest I pull together some more info and send it to Cobbetts? And if so, what?

You have done exactly the right thing. I received the same thing (to the word) in my Allocation Questionaire from Cobbetts. I wrote a letter the same day to the Judge who was handling my case and wrote that I was very dismayed that Cobbetts may amend its' claim or apply to strike out, based on: A: CPR 18 doesn't apply in the Small Claims track, and: B: I found it very unusual that they were asking for more information as the NW had already supplied them with that. I sent a copy of this to Cobbetts also

I just have a couple of quick questions. I hope someone can advise, I have looked through this thread but it is quite long!
I sent off all my statements to claim £1599 a week ago
Today I received a letter saying my claim had been passed through to the customer relations deprt and they would contact me within 2 days.
The letter was dated 9th Feb.
Q1. Should I ring them, I would prefer not to do this as there is nothing in hard copy.
Q2. Do I need to write another letter if they don't contact me in 2 days? If so, who to? Do I need to include all my statements again?

Stick to your time frame. I.e send a letter in 2 days giving them a further 7 days. I would send where you sent original letter and also cc it to branch and Borehamwood (customer relations).
Did you send a print out of charges or statements? You should not have to send statements as they already have these. I would send a copy of your print out again.
