  • This is Jansson's Temptation which I got from a Waitrose magazine; maybe you can leave the anchovies out and/or put something else in instead:

    50g tinned anchovies
    1 large onion sliced
    500g potatoes (such as Desiree)
    4 Tbsp double cream

    1. Preheat oven to 200C. Drain anchovy oil into pan and fry onion.
    2. Peel potatoes and slice into thin matchsticks.
    3. Add potatoes to onions, cover and cook gently for 10 minutes.
    4. Take off heat and stir in cream and chopped anchovies.
    5. Season, spread mix in gratin dish, bake for 25-30 minutes until crispy.

    Can freeze baked potatoes too (aswell as boiled/roasted etc mentioned) great for easy lunches

  • A childhood favourite which Grannie used to make, then Mum. I made it when I worked in a hotel and it went down well! Top comfort food. We call it Milk Tatty Soup


    Boil some potatoes

    Mash but leave quite lumpy.

    Pour on a pint of milk. Chuck in a handful of chopped parsley or chives.

    Bit of black pepper (check the seasoning). Heat. Eat.

    You can make it with left over potatoes as well.


    If you are cooking in the oven:

    Slice potatoes, put into a baking dish. Cover with milk. Season with salt and pepper. Bake until potatoes are tender and have absorbed most of the liquid. You can added some sliced onion or slices of cheese (brie is good).


    Corned beef hash

    Mash up the potatoes with some corned beef. Season (a bit of mustard if you like). Make into 'cakes' and fry. Great with baked beans!!


    Cut potatoes into wedges. Toss in oil, little bit of salt. Bake in a hot oven.

    I know gnocchi use potato but have no idea of the recipe.

    My fave is potato pancakes. You make up some good buttery mash and mix it with egg, flour and milk, then fry it up like a pancake. Good with grated cheese on or sour cream too.

    One last question, If I freeze mash, do I put the milk and butter in before freezing, and can I cook it from frozen,

    I freeze without anything extra added, just the spuds, and cook after defrosting apart from on cottage pie where it's made properly, but still defrost it first. Others may do different.

    If you click on the links squeaky posted I think there is a few on there about cooking from frozen

    If we are having mashed potatoes i always do extra and freeze whats left even after milk and butter has been added.
    I reheat in the microwave from frozen and add a little more milk and sometimes butter to make sure its not too dry.

    think veg shepherds pie already mentioned(though its nice with grated cheese put into the mash). I had in cornwall once mashed potato mixed with onion and cheese then browned off - it was delicious! What about veg stew with big chunks of spuds in it of jackets with insides scraped out, then filled with ratatouille and inside part of spud mashed on the side. Or veg hot pot - all the root veg plus onion in a little stock and rice if you like(not too much rice though), then put sliced potato on top and casserole in oven - yum!Or do a big pot of veg soup and dd spuds to it it really thickens it up.
