  • Bit of a late one here!

    Just had HM Mexican Lasagne which I made for the first time - it was very yum :j!

    Been trying to clean out my car today in between everything else in readiness for a new one arriving on Monday morning! Much excitement as I've been waiting for it for about 8 months! However as it's a work car the old one has to go back as clean as possible and with a doglet in tow that's no mean feat :eek:. However it is vacuumed well and has come up ok, front seats have had covers on so they pretty much look like new and the interior has had some Stardrops treatment which I'll finish in the morning.

    Hope all at the Bham meet had fun - was in the suburbs of Bham at lunchtime and thought of you all having fun :j.

    thank you! I lost weight a few years ago but my old job made me miserable so it crept back on. But i'm in the same frame of mind as the last time i lost it so i think i will be successfull.

    Only did 20 mins of a work out and i am exhausted!! Feel great though. 2011 is going to be a good year.

    Ok well it goes a bit like this.......... (based on a Nigella recipe but only very loosely (I'm not great at following recipes, prefer to 'do my own thing')). Oh, and can't do quantities I'm afraid, I just tend to throw it together and see what happens.

    So you basically use tortilla wraps instead of lasagne sheets and layer them up with two things, 1) a basic beef chilli and 2) and 'salsa'.

    I used a 2 portion chilli which I had in the freezer.

    The 'salsa' was onions, celery, peppers lightly fried in a wok, add a tin of chopped tomatoes, half (ish) a tin of sweetcorn and some LO baked beans (optional I guess if you don't have LOs), plus some herbs and enough chilli spice to your taste.

    Then layer: a bit of salsa and grated cheese, tortilla, chilli, salsa, cheese, tortilla, chilli, salsa, cheese, tortilla. Then on top whatever you've got leftover to keep the top tortilla moist - I didn't have anything but had 1/4 carton of passata so heated that up and poured it over. Final sprinkle of cheese on top and whack in the oven for 30 mins on about 180C. Oh and as I'm the only one who likes mushrooms, I put a layer of sliced uncooked mushrooms at one end (and a slice on the top so I knew which end it was ;)).

    Sorry, my cooking is a bit haphazard - hope this makes sense - feel free to ask if it doesn't. It was yum yum yum :T:T:T!

    Oh and should say I finished up with 6 portions and we had a small side salad with it - gotta be your 5-a-day in one meal!!

    I teach McD's staff Maths via an online course to GCSE standard, one of the managers told me that January was often quiet. It's true that some of my learners have been more active. I was just thinking the other day that I've never had a Cornish learner. Plymouth is the nearest I've got.

    I've had a good MS day. Day 3 of my broth, still tasty, and bought some clothes in the sale at the X Catalogue Shop (NE chain) also Primark and Poundland. (Posted my goodies separately in the relevant thread.)

  • Sorry i will learn to quote- tired mum, the social work course means you are eligible for the nhs bursary- currently £4500 per year on top of the normal loan/grant and isn't repayable- another reason why it's hard to get on. You might be surprised at what they do get.

    Evening All

    Hugs to all that need one.

    Not been on for a couple of days. DD visiting from uni and has brought her friend with her. She is a lovely girl and it is great having some female company. They, and another friend are upstairs getting ready to go out. Every mirror in the house has been taken into the bedroom, I think most of the towels have been used, there is make-up, fake tan, clothes, shoes and bags everywhere and the electric usage must be horrendous with the hairdryer(s) and straighteners working overtime. It's great though. Going to take a photo when they are (finally) ready.

    Had a lovely walk to town today and picked up a few things. Feel better for a walk and fresh air after consuming rather a lot of wine last night.

    Weigh-in tomorrow and hoping to have lost a pound or two, will let you know.

    :D Halight - you are so funny:D:T as I left they were making plans for the evening! probably a few sore heads in the morning as the wine was flowing:D

    DH and I had the morning to shop - went round the Bull Ring, I got a lovely coat in Gap reduced from £99.99 to £29.99 - will do me for years:T DH got a nice shirt from the same shop in the sale.
    We met up in the pub for lunch - was lovely to meet everyone and they are all a lovely bunch of people(as I knew they would be). We had a nice lunch - the pub was full of character(and characters;):D) and we all had a good natter, not a great deal of OS talk mind you.

    I've taken a few pics and will put them on FB(I'm not in them luckily although I may be in somebody elses but not if I can help it:D)

    Am shattered now - had a headache on the way home and fell asleep on the train, feel a bit better now. I'm sure the others will have lots to say tomorrow.

    Redruby - (((hugs))) hope your Mum is ok, sorry about your Dad but glad he's in a safe place x x x
