Mincemeat Cake ... sorry, it's an old old recipe & I can't do metric
4oz marg or butter
4 oz dark sugar (you could use any kind I guess)
3 large eggs
12 oz mincemeat
7 oz plain flour (wholemeal's nice) sifted with ---> 2 teaspoons baking powder
milk if needed
1) cream fat & sugar
2) beat in eggs
3) add mincemeat
4) add flour & baking powder, mix gently adding milk if needed to make a soft mixture
5) put into lined cake tin (I use a 9", but it's not critical) & bake @ 160 for 10 minutes than turn the heat down to 150 for an hour & a quarter, or till done* which will depend on the size & shape of the tin
* when a thin knife or skewer inserted into the middle of the cake comes out clean0 -

cheers& you can use any size or shape of tin, just adjust the cooking time to suit
this is good too ... Mincemeat & Coconut Slice
6 oz plain flour (again I like wholemeal)
1 teaspoon baking powder
4 oz butter or marg
2 oz soft brown sugar
2 eggs
4 oz soft brown sugar
1 teaspoon vanilla essence (optional)
8 oz mincemeat
6 oz dessicated coconut
1 Tablespoon flour
1/2 teaspoon baking powder
1) mix flour & baking powder
2) rub in fat
3) add sugar, mix well & press into a tin at least 7" x 9" preferably larger
4) bake @ 180 for 10 minutes or till pale golden
5) beat eggs, sugar & valilla till thick & creamy
6) stir in mincemeat & coconut
7) fold in combined flour & baking powder
8) spread evenly over cooked base
9) bake for a further 20-30 minutes till the filling is set & golden brown
10) cut into fingers or squares to serve0 -

as the title says, what can i do with it??
don 't really fancy making mince pies now and i'm guessing it won't kee in the fridge till december so does any one have any bright idea's on what i can do with it??

What about getting some filo pastry and making an apple and mincemeat strudel? Should be enough for two, one for now and one for the freezer?0
