Mincemeat Muffins
12oz self raising flour
1 tbsp baking powder
9 tbsp sunflower oil
12 fl oz water
6oz caster sugar
5oz mincemeat
1 tbsp demerara sugar
Pinch cinnamon
Sieve flour and baking powder, add caster sugar and mix well. Add the oil and water and whisk quickly, stir in the mincemeat. Put into cases (about 12). Mix together demerara and cinnamon, sprinkle over, cook at 190C/375F/gas5 for 15-20 mins.0 -

Bake a pastry case blind, put the mincemeat in the bottom, 2 eggs whites, 4 ozs castor sugar teasp of cornflour, whizz up the eggs whites, pour in the sugar and cornflour and whizz again until glossy, pour over the mincemeat and bake in the oven at 350 for an hour, then turn off the oven and leave overnight, in the morning you should have a scrummy mincemeat meringue pie. (this only works of you have an electric oven) if you have a gas oven take it out after the hour and leave to cool, the meringue will not be quite so crispy............but then some people prefer it that way.
