    I've just remembered something - just before Christmas I decided to do something like the apple braid which someone posted on a thread ages ago, but I used half a jar of mincemeat instead, and then drizzled on a nutmeg flavoured glace icing. It was yummy!

    Hi everyone,

    got a jar of mincemeat left over and wondering what to make - any good ideas ?

    don't fancy anymore mince pies after Christmas time.

  • Eccles cakes. Bit of puff pastry - cut into circles. Stick a teaspoon of mincemeat into the middle and then stick another circle of puff pastry on top. Cut two little lines in the top, quick egg wash and a sprinkle of sugar, and whack it in the oven till it puffs up and goes golden brown.

    Easy cake.
    Some days, it's just not worth chewing through the leather straps....

  • What about this recipe, given to me by my friend?

    Mincetray bake


    6oz SR Flour
    4oz Margarine
    2oz Castor Sugar
    2 Tablespoons Mincemeat
    2Large Eggs
    Vanilla Essence

    Place all the ingredients in a bowl, and beat with an electric whisk fo 3-5 minutes.
    Spread onto a prepared (greased) baking sheet, and bake for 20-30 minutes at 180°C / 350°F / gas 4, time will vary depening on the oven. For fan ovens time may be reduced.

    When baked sprinkle with castor sugar/ icing sugar and cut into fingers. Well yummy!!!!!

    i have made mincemeat muffins (receipe on here somewhere), i have added mincemeat to fruit loaf and also made a traybake of twinks with mincemeat. even hubby ate the fruit loaf and he claims to hate anything with mincemeat in, obviously i havent told him!!! :P

    Excellent timing and what yummy suggestions already. I like the look of that tray bake.

    Just yesterday I was sorting out my open jars in the fridge and came across about a third of a jar of mincemeat. I nearly chucked it as it is about 2 weeks over it's use within 6 weeks date, but it still smells fine and my New Year's Resolution is to waste no food whatsoever this year (although technically it's from last year so doesn't count).

    a friend was telling me about a Jamie recipe she'd seen - apple studel with leftover mincemeat, guess just apple pie would work as well

  • I made a similar traybake to the one mentioned above in December last year, except I added a layer of grated apples before the mincemeat and then put some crumble mixture on top. It was very rich but very nice indeed. :)

  • Glad I've stumbled across this as I've still got 1 jar of HM mincemeat in the cupboard so I shall definitely try a few of these Recipes tomorrow.;)
