yesterday we made mincemeat flapjacks
put half the flapjack mix in a baking tray, spread with mincemeat then top with the rest of the flapjack mix, baked for about 20 minutes
absolutely delish, soft and slightly chewy but crispy on the top!!0 -
Mr S in Chester had jars of mincemeat for 6p yesterday. Dont know if it will be in other stores too, but if any of you are from Chester its got to be worth a trip !0

Oooh some lovely recipes here! I have a large jar of mincemeat leftover from xmas so I think I'll have a go at the mincemeat tart with a meringue topping for pud next time OH's parents come for tea as his dad loves mince pies (as do i!!)0

I would keep it in the fridge if you have space. I have kept opened mincemeat in the cupboard for months & when I went to use it, it was dry at the top but after scooping he top bit off, found that it was fine underneath.0

I personally wouldn't keep an opened jar but if you must why not top it with some spirits - brandy or rum - to stop the top drying and then can be mixed in when ready to use it?
However I would have thought a year is far too long to keep an opened jar. Why not make some baked apples for pud with mincemeat in the core and use it up?0 -
