I use a pre cooked pastry case, put the mince meat in the bottom and then top it with a two egg white meringue........I like my meringue crispy, so I put a level teaspoon of cornflour in with the sugar. Put it in the oven at 150c for an hour and then turn off the heat and leave in overnight to cook in the residual heat from the oven. This works best with an electric oven......the next day the merngue is so crisp it melts in your mouth, and no chance of any nasty's from meringue that has not been properly cooked.
I did the catering for a NT garden and meringues made this way were a firm favourite, sandwiched with cream. I used to buy dried egg white which is already sterilized, I am not sure if you can buy it now. Its many years since I did any large scale catering.Was 13st 8 lbs,Now 12st 11 Lost 10 1/4lbs since I started on my diet.0 -
I had a friend who used to put mincemeat in scones instead of the raisins. They were just a little bit spicy.0

Have found a jar of mincemeat at the back of the cupboard - what would you do with it?
Not sure if its possible, but would prefer something that could be made and frozen as I have an apple crumble made already for today.
Have flour, breadcrumbs, crumble etc so could make pastry?
I havent got much of an imagination and can only come up with...mince pies!0 -

You could make a steamed sponge pudding with apple in the sponge and mincemeat on top :j

I make the weetabix cake & add mincemeat, I use the same recipe & add dried fruit, bananas or apple, whatever I have a glut of.

Drat! Wished I'd read this before I cooked the apple crumble, could have combined the two, eeked it out a bit with oats and made 2 one for Sunday and one for the freezer (or Monday!)
Off to make buy some cooking apples, am making an apple & mincemeat crumble and a mincemeat cake!

keep them and make mince pies with them later this year. I regularly use jars of mincemeat that are well past their best before date, and they still taste great.0

Yup, try an open latticed mincemeat tart for summer days with a big dollop of ice cream or creme frais on the top. I sprinkle a little coconut over about ten minutes from the end to give it a different taste,or better yet for a slighly posher version when mixing the mincemeat in case its dried out a bit a nice heafty dollop of whatever your favourite tipple is Brandy, or even some left over grand marnier liquer from Christmas.0
