If it wont set it hasnt reached the right temperature, stick it back in the pan and reboil for 2 mins and test the temp if you have a sugar thermometer or drop a little into a glass of iced water to test for soft ball stage.

Can anyone please help me with this? I have decided to make some home made sweets for Christmas presents - so have started early so I can test them out;)
I have tried 3 different recipes for fudge - one using clotted cream, one using Carnation milk and one using normal milk - they all taste far too sugary and the only one which set - and believe me it was like concrete was the milk one - the other two never set.
I have been using a sugar thermometer to the 116C as determined by the recipes which is the "firm ball stage".
Has anyone got a tried and tested recipe I can use please?

I have always struggled to make fudge. Even when following the recipe to the letter, using a thermometer does not always work, but I did find a fool proof recipe for chocoate fudge.
The recipe was:
400g chocolate (!!!!!! or dark)
1 can of condensed milk
100g icing sugar
Put the condensed milk and chocolate into a saucepan on a low heat still occasionally till everything has melted and the mixture is smooth.
Turn off the heat and leave for 10 minutes, then sift in the icing sugar whilst mixing and put into a greases tray and wait till it sets before cutting up into pieces.0 -

I tried to make the stuff you get in the middle of dime bars the other day. We ended up with something like fudge, but nicer. Guess we didn't cook it long enough.
