What did I do wrong fudge making!

    397g Carnation Condensed Milk
    150 ml ( 5 fl oz milk
    450g ( 1lb) demerara sugar
    115g ( 4oz) butter

    Grease and base line an 18 cms ( 7") square tin with baking parchment.

    Gently heat all the ingredients in a large nonstick saucepan stirring until the sugar dissolves.

    Bring to the boil and simmer gently for 10-15 mins stirring continuously until a temperature of 118 deg C(240F) is reached on a sugar thermometer.

    Alternatively test the fudge by dropping a little into a jug of cold water If a soft ball is formed the fudge is ready.

    Remove from heat. Beat until thick and grainy- about 10 minutes. Pour into the prepared tin and leave to cool. When cold cut into squares.

    I struggled for years making fudge now I make it easily in my slow cooker! 500g chocolate, 1 tin condensed milk, 1 dtsp vanilla extract, 1 tablespoon butter, cook on low for 2 hours with lid off and stir every 15 minutes. Pour out onto lined tray cool and refrigerate overnight, cut into chunks and enjoy or gift. I make lovely white chocolate fudge and milk chocolate fudge, hope that helps some of you.
