What did I do wrong fudge making!

    I was handing them out to customers as work, and it was funny seeing their eyes pop out as the sugar hit them! Ha...

    Its a shame that after you reboiled it, it didnt set...did you watch any YouTube videos to guide you?! Thats what I did...

    I even kept stirring once it boiled when your not supposed too... - I let it cool down a little before pouring into the tin too!

    Merry Christmas everyone - heres to having no teeth fall out!! Haha

    hello all, I made some fudge for the first time last night. although it tastes nice the texture is very crumbly and not at all fudge like! I used a thermometer so knew it had got to softball stage then whipped in some chocolate and beat it for a couple of minutes. I used sugar/whipping cream/amaretto/chocolate. Does anyone know why its goone so crumbly? am guessing its not supposed to be like that- i thought it would be much smoother

    that is how home made fudge should be only the shop bought stuff is chewy hth

    Not true.

    The only difference between crumbly fudge (tablet) and soft, chewy fudge is the length of time it's beaten for. Soft fudge needs a good 10 minutes of vigorous beating. You can reheat and rebeat if you don't want to start from scratch. ;)

  • Have to admit it's 'crumbliness' that to me distinguishes delicious 'real' fudge from the commercial stuff, which is always disappointing. So to my mind you haven't done anything wrong.

    Me too. I don't really like commercial stuff but could eat the stuff with the slightly chalky texture until I made myself sick :o

    yes, really soft smooth fudge requires about 10 mins hard beating - I cheat and put the fudge in a warmed bowl and used my electric hand mixer with the beater attachments. 3 mins later its just how I like it! (if you like the really really smooth fudge - give it another minute or so).

    please post your recipe for crumbly fudge! I've made fudge at least a dozen times and its always smooth, BUT I WANT CRUMBLY!! I too use a mixer- i wonder if thats my problem.
