What did I do wrong fudge making!

Put it in little jars labeled fudge sauce? Would be good as ice cream topping especially if you add some melted chocolate to it.
I made some baileys fudge from nigellas site and mine seemed a bit soft so heated it up again, gently to avoid burning just for a few mins then reset it and it worked well.

My son and I have made some fudge this evening. It was our first attempt and probably our last!! We used a recipe that my son found on the waitrose website.
For some reason it is not setting. He has now gone to bed totally despondent! Is there anything I can do to rectify this or is it destined for the bin!! I knew when we started it would be cheaper to go and buy some!!0 -
Did you check the setting by putting some in cold water, so that when it is dropped in, it forms a soft ball?
Fudge needs heating and beating; to keep it from forming sugar crystals....try reheating it tomorrow, so that it forms a soft ball; then beating hard and only then, put it to cool.If you haven't got it - please don't flaunt it. TIA.0 -
Hi, hoping someone may know the answer to this
Yesterday I made a big batch of irish cream fudge from a recipe in the weekly aldi mags. I was planning to give these to people for Christmas gifts. Anyway, followed the instructions to the letter and poured the mixture into a tin to set. It has now been in the fridge all yesterday afternoon and all last night but is not set. It's like a sticky, creamy consistency.
So my question is...is there any way I can salvage this enormous batch of fudge? I really don't want to have to throw it!

Can I ask did you reboil the fudge and has it now set. Made some tonight with my son and it hasn't set. He is so disappointed and so am I. Wasn't cheap to make either!0 -
I bet he didn't stir it enough. Re-melt it gently, then stir it again - hard. Until your arms ache.The acquisition of wealth is no longer the driving force in my life.0

Is it like a toffee consistency?
You can usually just re-heat it and try it again in my experience. (at least when I mess up my 'butter tablet fudge')
After reaching the correct temperature, I place the pan into another tray filled with very cold water, and then beat the fudge like a mad man and poor into a small tin or something.0 -
Mine set after I reboiled it...just kept it on a low heat to begin with until it became a liquid again...and boiled until the softball effect - watch some YouTube videos to check what thats supposed to look like.
After it had cooled, I put mine in the fridge - and its perfectly set...however is sooooo sweet!! 500g of sugar from the Aldi recipe - wondering if I can get away with not using as much because its for my boyfriends grandma...its going to send her blood sugar levels through the roof!!!!0 -
You could make some little pastry cases, pour in the fudge (and some nuts/dried fruit) and call them fudge tarts? Would just need to be kept upright.
If it's really liquidy you could use it to fill choux buns for dessert one day.
Or jars of fudge sauce with some homemade biscuit roll things to dip in?Living cheap in central London :rotfl:0 -

I did reboil it but unfortunately after still lots more setting time it didn't set properly. It has not gone to waste though, DH and I heated some up and poured over icecream! Yumthough Helenalyh I know what you mean about the sweetness! Could almost feel my teeth cursing me as I ate it!
We'll probably take the rest to my family for Christmas to have on desert or something. Failing that, would probably make good glue! Hehe.

Thanks for the update. I had exactly the same problem and just kept it in a screw-top jar in the fridge for ages and used it over ice cream and to make a banoffi-type pie.Father Ted: Now concentrate this time, Dougal. These
