What did I do wrong fudge making!

    I just have a couple of questions.

    How long really are you supposed to boil it for and for what tempreture...

    i still just can't get it right :(

    If it is bubbling (i.e. boiling) I'd say it is at the right temperature. Keep stirring, or it will catch and burn.

    The recipe says to boil for 10-15 minutes.

    What is the problem? Is it not forming a "soft ball" when dropped into cold water as described?

    The beating part is important, as you need to get air into the mixture.

  • I don't think i know what a soft ball looks like? lol.
    It does boil but it just doesn't set at the end.. i felt i got so close last time.
    It was setting but then just stopped?
  • It sounds as if you are not giving it long enough.
    Try the link I put in my previous post. It shows you everything from soft ball to hard crack... :eek:

    You need to keep testing until it gets to the right consistency, and you must keep stirring while it is on the heat. Perhaps you had the ring turned down too low so it wasn't boiling properly?

    Get your jug of ice-cold testing water ready before you start, and be careful you don't burn your fingers. If it isn't right on the first test just keep going and test again in a couple more minutes, and so on, until it is right. Or in other words, just fudge it! :rotfl:

    i have to say i have made this fudge and it is divine,hence to say i dont make it too often

  • HI everyone,

    I tried making some fudge yesterday and got frustrated waiting for the sugar thermometer to get up to temperature so i wandered off for a few minutes and when i came back my fudge had burnt to the bottom of the pan...okay...lesson learnt - don't leave fudge unattended....

    but my question is; if i use this pan to try again will the fudge burn again?

    I have experience of things burning in this pan (my mum says that once you've burnt something in a pan it tends to always burn)

    Or do people think it should be okay? or should i buy a new pan for fudge making?

    Give it a good clean and then get some olive and a kitchen towel...dab some oil onto the towel and rub it into the inside of the pan..all around!
    Try it again and if it works..great but if not..keep the pan for easy things otherwise toss it.

  • Boil some cola in the pan and leave for a little while then wash as normal I have used this method lots and it works like a dream

    Another method is to wash out all the loose stuff from the pan that you can, then when you are down to the black burned layer, wet it (just a bit more than damp, not sloshing around with water), then sprinkle in a good layer of bicarb soda (enough so whole base of pan looks white). Leave it to one side (a day or two is fine), just dampening everything again if it totally dries out. Then use a scourer and the bicarb itself & rub the bottom of the pan and you should find that the black burned layer comes straight off. Have used this with saucepans, baking trays, woks, & always found it worked.

    Help! I made fudge/tablet and it won't set. :rolleyes:

    Should I return it to the pan and heat it some more? Last time I made it it burned a little in the pan but it set ok and it didn't taste scorched.

    Advice please.
