i always boil it in the can0 -
ok, when i make scottish tablet it is runny until I take it off the heat and beat it with a wooden spoon (or usually I beat it with my electric hand whisk!) as it cools it thickens.
Perhaps you could try this?0 -

If you are making Millionaires shortbread the caramel topping should really be:
150g dark brown soft sugar
150g butter
397g tin condensed milk
Melt butter with sugar until sugar dissolved. Add con. milk then bring gently to boil, until you see first bubbles, then off the heat.
I think by adding the golden syrup you have made it to runny, I don't know if it will set.

To check the consistency of a sugar based mixture, drop a tiny bit into a saucer of water to see if it's hard or soft and that will give you an idea?0

well i just stuck it inthe freezer in the bowl i wisked it up in and it has thickened round the edges so i have taken the plunge stuck it on top and now have put it inthe fridge. will see what it looks like inthe morningStill TryingGrocery challenge July 2016

Just a thought, when you said "Carnation", it was definitely condensed milk and not "Carnation" evaporated milk you were using?
Trying to puzzle out why it wouldn't thicken!!0 -
I made some fudge today. It was all going well at the pan stage, but then when I put it into the bowl to mix with chocolate the whole thing just turned into crumbs. It's been in the fridge for a few hours and is tasty, but like some kind of crumble topping! You couldn't cut it into pieces, for instance.
I'm hoping to make fudge for Christmas presents, so need to master this!
My first thought is that there just wasn't enough liquid and when I mixed the hot liquid from the pan (sugar, condensed milk, butter) with the cold ingredients (chocolate chips mainly) it was just too dry.
But I know that the level of heat, timing of heating and stuff can also affect the result too.
So, has anyone made fudge and had a similar problem?
Is it likely to be just not enough liquid, or is there a further problem?
