What did I do wrong fudge making!

    I always thought that fudge had to reach a certain temperature for it to set. Sounds as if yours didn't quite get there. I don't think you can save it now, but how about using it to top a cake or adding some cream and calling it fudge sauce?

    I posted on here about a week ago about my fudge question and I can't find it now! I am still struggling with this stuff. I did it as the above poster and after about a week (!) in the fridge, it still hadn't set, so I put it in a bowl over a pan of boiling water, got it hot and it felt thicker than before, so I tried it again - still didn't set! After another few days, yesterday I added more chocolate and some fruit and nuts to give bulk and actually got it boiling in a pan over the gas and it felt right - been in the fridge overnight and it still feels soft and squishy! My husband says to throw it away but it tastes lovely, just not like fudge but too stiff to put on ice cream as someone suggested. I am tearing my hair out with this stuff and I was going to give some to elderly neighbours and friends but I asked one of them for some advice the other day and she tasted it and didn't say anything so she mustn't have thought much about it! Can anyone help at all?

    HI OP! If it hasn't turned out ok then this recipe from Nigella is a quick, cheap and easy alternative. I hope it turned out for you OK, I know how gutting it can be to go to this effort and have it not turn out OK.

    And mazza try millionaires shortbread using fudge topping, chocolate fudge cake or something like that. From the sounds of it it's good for that use. Have you tried freezing it? That may set it.

    I'm so pleased (in a nice os way) that someone else has problems with fudge, I have made it successfully a few times and this week I have made two batches and it is a sticky mess, I don't know what I have done wrong, I suspect it wasn't hot enough.

    However, I made the Nigella Fudge thing (link above) and its lovely, dead easy to make and you cannot go wrong. I put mixed nuts in it as they were cheaper to buy, I will make another batch for Xmas but I think I will use milk chocolate, Nigella does tend to like her food rather rich, and you simply cannot eat more than a couple of pieces.

    I will never ever try and make fudge again after the trouble I have had with this lot! Anyway, I looked at it again and decided just to hack it up, rolled each piece in icing sugar and will just have to keep it chilled until people eat it. I just dread opening the box after I've offered it to someone, to find it all congealed and in a big lump again!

    Having said that, I always make rum truffles and I am even having trouble with that mixture today. I made it last night, put it in the fridge to solidify, and today when I looked at it, it had solidified alright, into a big hard lump which won't soften at all. Anyway, I have melted it a bit again and added more rum. It should be alright. I hope so anyway. All my hopes of offering people some of all my homemade chocolates are going up in smoke! I wish I could find my original post on here about fudge as there may be some answers on there and I haven't thanked people for replying. I am rapidly running out of time here!

    Well my fudge has remained in the fridge since that night and has not gotten any more fudge-like so i think i will have to transform it into something else as it is quite delish eaten with a teaspoon lol

    Although later that night i just could not settle that it hadnt turned out right so went for nigellas pistachio and chocolate fudge recipe, left out the pistachios and added baileys and it turned out PERFECT! cut it into squares and dusted it with holographic edible glitter and put into little sparkly starry cello bags and tied with gold ribbon and a gold tag it looked amazing!! i use past tense as there is none left but please people try using this adapted nigella recipe and you shouldnt fail!

    Ingredients
    500g chocolate (i used tesco value chocolate as its all i had left in the house and it still tasted out of this world!)
    1 x 397g/14oz can condensed milk
    30g/1oz butter
    about an inch and a half of baileys if measured in a normal tumbler/glass i just went by what i thought was right!


    Method
    1. Place condensed milk into a heavy-based pan over a medium heat and stir until it gets hot, watch as it will catch and there is no need to get it boiling!
    2. Add half the chocolate and mix thoroughly, it turns into a glossy mixture that stiffens up from being a liquid quite quickly. Stir in half your Baileys now.
    4. Add the rest of the chocolate and baileys stirring quite quickly so that there is no lumps.
    5. Pour out into a pan and flatten with the back of a wet spoon or with a pallet knife and leave in the fridge overnight.
    6. Cut into small pieces and pop into bags if giving as gifts or a airtight container if keeping for yourself.

    I knew straight away that this would set as you could just tell it was more like a fudge than the first recipe.. hopefully you will have the same luck if you give it a go.

    This keeps best in the fridge as it gets a bit sticky once its sat out a while but we arent talking melting blobs of fudge, just better consistency eaten straight from the fridge :)

    If you do try please let me know how you get on, i plan to make a 2nd batch before xmas eve see how long it lasts lol

    i made some a couple of days ago for the first time and did everything right but 24 hrs in the fridge and it was still more like a runny toffee.yesterday afternoon i scraped it all off the baking paper and re-boiled it.it worked brilliantly and it's lovely-but very sweet

    Sorry if I am in the wrong place. I have just had my first go at making fudge and it has gone all crumbly and hard, ie. nothing like fudge! What have I done wrong?
