What did I do wrong fudge making!

    I'm no fudge expert but did you use a thermometer ?

    No- I don't have one. I followed the supposedly foolproof recipe to a tee too. I have tried it and it tastes like fudge but doesn't have the right consistency.

    Traditional fudge isn't actually squidgy like you can buy in the shops, it is hard and grainy and you can feel the sugar grating on your teeth.

    Send it over and I'll probably eat it one go.......

    Maybe you should look up a recipe for soft/creamy fudge??? I'll have a look....

    Hmmm maybe I have done it right then, although it doesn't look anything like the picture (see below)....I think I will stick to Thornton's next time. Thanks for the replies everyone.

    ps. Alex, if you do find a recipe for soft fudge, please post it here! Thanks.

    Sounds more like traditional Scottish Tablet to me.

    Hiya

    I made fudge last christmas(god the recipe made oodles of the stuff lol) and it came out all crumbly a bit like tablet and was yummy, it was from womans own magazine(a middle bit with loads of chritsmas recipes) damn i can't remember tha recipe.

    I also had a go at their recipe for truffles(made with crumbled cake) it was foolproof and had a nice amount of booze in lol it made about 60 of them and i decorated like little christmas puds, was a great gift in pretty boxes(sorry going off topic but they were nice lol).

    I prefer the squidgy chewy fudge myself especially Baileys fudge mmmmm

    Tablet is a kind of fudge I think. A local delicacy called 'Orkney fudge' looks (and tastes) like what we used to call tablet, when I was younger (not in Orkney). My fudge, made yesterday with leftover condensed milk, came out soft and crumbly- looks like packed sand. I don't use a sugar thermometer and it works out ok, but if you are unsure you might want to get one.

    I use this recipe. Foolproof and no thermometer needed. I added baileys to it - it was amazing. You do have to beat it for a long long time though to get it smooth

    Hi,

    On youtube there is a video that has been posted of Nigella making fudge. I dont know if I'm allowed to put a link of it on here, but if you type in 'Nigella pistachio fudge' you should find it without any problems.

    It's a great recipe.
