What did I do wrong fudge making!

    The fudge they sell (v. expensive) at our local farmers market is the crumbly kind, but I only like the smooth type! Guess it must take longer to make to ensure all the sugar crystals are melted in!
    A waist is a terrible thing to mind.
  • I use this recipe. Foolproof and no thermometer needed. I added baileys to it - it was amazing. You do have to beat it for a long long time though to get it smooth

    I think I'd describe it as a goodly splosh ;)

    Between 4 and 6 tablespoons I expect (possibly a bit more) ;)

    I made some of the Nestle rum raisin fudge today and so far (from what I could scrape off the spoon) it tastes really good. I suspect it will be more creamy than crumbly but I'm not really that bothered as I know it will get eaten and it has the nice grainyness you would expect from fudge.

    Might try the recipe on that site for tablet and see how that works out
  • i have made a kinda millionaires shortbread and i have made the fudge tpping but it is sitting in my saucepan and it is not thickening ?????


    what to do i dont want to start all over and i do not have another tin of carnation

  • yes i am this is the ingredients

    175g Butter
    175g caster sugar
    4 tbsp golden syrup
    1 x 397g can condensed milk

    It should thicken if you boil it (rolling boil) for 3-4 mins.

    If it doesn't then I'm not sure why it hasn't.
