What did I do wrong fudge making!

If it wont set it hasnt reached the right temperature, stick it back in the pan and reboil for 2 mins and test the temp if you have a sugar thermometer or drop a little into a glass of iced water to test for soft ball stage.

I had my first attempt at making fudge at the weekend and am reasonably happy with it.However, and I know this is personal taste, it is disgustingly sweet. Next time, I shall cut into smaller portions, however, is there anything I can add so that it is not so sweet.
I did think about adding a little lemon, but not sure how it would react with the milk.

I know, that it the huge downside to it. It is amazing how little knowledge we have when it comes to confectionary, yes we all know it is sweet, but how much sugar is in it. No wonder kids are hyper when given "kids" sweets, eg flying saucers etc. Better not name a particular manufacturer!A smile costs little but creates much0 -
If you add 70% chocolate to the recipe it will bring down the sweetness as the chocolate is quite bitter. I love 85% and often add that it doesn't make it bitter just takes away the sweetness.0

There is actually a thread that was started last year with lots of homemade sweeties on it, I don't know how to link it so I shall leave it up to those that know! I do know however that as well as adding some of my own recipes, others had many fine recipes that I also tried, I ended up doing home made boxes of chocs for Christmas gifts.... they received huge compliments!Starting weight 17st 4lb - weight now 15st 2lbs

Adding Vanilla to the recipe also brings the sweetness back a bit.0
