  • Oh yes I often add dried apricots :) Yum.

I also add sesame seeds, sunflower seeds, pumpkin seeds, raisins, coconut and leftover crushed cereal (waste not;) ) Nuts of all kinds are good too.

I'm going to have a try at making flapjack yet again, I never seem to get it right, last lot I made was too crumbly, they always taste nice but arent the right consistency to put into packed lunches, they always just get left in a container and we grab a mouthfull when we pass it :rotfl:

Wait until they are cool before you cut them.....otherwise you'll be doing flapjack jigsaws. I've wrapped mine individually in foil and put them in the spare fridge in the garage, so the children can just grab one for their lunch box when they want to.

  • My friend gave me this recipe, it is sugar and dairy free and dead easy

You can use any measure, we stared off by using the honey and malt extract jar, but now buy both in bulk so use cups.

    1 jar runny honey
    1 jar malt extract
    1 jar sunflower oil
Place in large pan and heat gently to mix everything, then add rolled oats (and seeds and dried fruit if you wish) until everything is coated and it is fairly stiff. Bake about 20 mins in a coolish oven.

Posted this on another thread yesterday - if you can't/don't want to use the oven

    Microwave flapjack -

    4 oz butter
    1 oz white sugar
4 level tablespoons (60ml) golden syrup
    8 oz rolled oats
    a pinch of salt

Put the butter & sugar in a bowl on full power for 1 minute, stir in the syrup & salt and stir in the oats. Put the mixture in a shallow greased dish and heat on full power for 3 mins. Leave to cool (I put them in the fridge) and cut into squares.

Well I made my flapjack, added some chocolate chips and raisins I found in the cupboard, looks delicious, but its stuck to the greaseproof paper  I forgot to brush some melted butter onto it didnt I? So thats another batch that cant be used for lunch boxes. I might be able to salvage some of it, its still cooling off though.
Thanks for the tip Pink-Winged, its cooling down now.
