Hello one and all.
I went on a bit of a munch thru my housemates tracker bars yesterday, she wasn't chuffed, and neither was I...Tiny little chewy bars which get away with themselves low fat cause they're so small, but you have to eat a box before they begin to touch the sides!
Flapjack is much nicer, and more filling, and though I'm pretty sure its just oats and syrup, has anyone got a good recipe?

I'm afraid that when I make flapjack, I just tip in a couple of cups of oats, then add enough veg oil until it is slightly moist and stuck together, then a good dollop of syrup and a handful of raisens - not very scientfic I know!! :rotfl:0

Hi! I know what you mean about the tracker bars ive done that myself and before you know it you go to get another and they are all gone. :eek:
I tried various flapjack recipes lately but now found one which im sticking to as its the best ive made and gets eaten all the time. This recipe came in my book with my new combi microwave. Thing is do you prefer a crunchier type or chewier sort? This recipe makes a chewier crumbly type yummmmm!!!
RICH FLAPJACK
175g margarine
100g demerera sugar
175g golden syrup
275g jumbo oats
Place marg sugar and syrup in large bowl and melt. Stir in oats and mix well.
Spoon the mix into a well greased 10" flan dish, smooth the surface and cook.
In my combi microwave i cook this for 18 minutes on low rack on 180c and 10% microwave until golden brown. Now if you cant do those settings then im sure you could just do 180c for probably 20-25 minutes.
After cooking loosen flapjack around the rim and slice into 10 pieces. Leave to cool in the dish for approx 2 hours. (if you can wait that long)
I then usually melt some tesco choc and spread a layer on top. I also freeze them which works well.0 -
My recipe is biased towards sweet, as opposed to butter. Also, I've found that crunchiness / chewiness is determined in part by how long you cook it for. I prefer a chewy base, but a crunchy top.
8oz Margarine
8oz Syrup
4oz Demerara Sugar
13oz Oats
A generous dash of ginger.
Melt the marg, syrup and sugar in a pan over a medium heat on the cooker. Keep stirring all the while. When the marg has all melted, and the sugar has dissolved, add your dash of ginger and stir in the oats. Take it off the heat and pour into a greased baking tin. Spread it evenly and put in the oven.
At this point, I get all neurotic in order to achieve my preferred crunchiness:
1. 12 mins on Gas Mk 4. (Middle Shelf) Take out and rotate 180 degrees.
2. 12 mins on Gas Mk 4. (Middle Shelf) Take out, ease from the edges a little and mark into squares. Push onto top shelf.
3. 5 mins on Gas Mk 5. (Top Shelf) Take out and rotate 180 degrees.
4. 5 mins on Gas Mk 5. (Top Shelf) Take out and leave to cool for about 10-15 minutes.
5. Carefully remove from the tin and allow to cool on a rack.
6. Resist temptation to eat.
A useful tip I've picked up is to fill a cup with boiling water, and place a metal spoon in it. Use this spoon (Carefully!!) to scrape out the syrup. Then empty the cup of water and fill it with cold water. Then put a metal spoon in it, and use this spoon to spread the mixture in the tin. When your spoon started to get covered in mixture, dip it in the water and carry on."Peter Pan is 2. Shirley Bassey is 3. Dr Ian Paisley is 4. King Lear is 5. Why?"

4oz marg

8oz porridge oats (I use value ones)
1/4 tsp salt
Melt marg and syrup in a saucepan. Add sugar, oats and salt and mix well.
Turn into a square tin and cook for 25 mins gm 3. Cut into pieces whilst warm.
(I also try to add a few chopped prunes at sugar/oats stage to make them a bit healthier..if that's possible...makes me feel better anyway...sorry...i digress)0 -

cheese flapjacks are a nice change Savoury flapjack Great for lunchboxes and snacks.
1 egg
25g butter
75g grated cheese
70g porridge oats
All you need to do is mix the ingredients and press into an 8 inch tin. Then bake for about 30 to 40 minutes at 180 degrees until golden brown.
Once it's cool cut it into slices.
or this one Easy veggie Oatie Bake
5 oz oats
4 oz grated hard cheese
2 oz melted marg + little extra for top
1 chopped onion
1 large chopped pepper
1 large tin drained sweetcorn
1 egg beaten
Mix all ingredients together in a large bowl. Press firmly into a greased/lined baking tin. Brush top with melted marg. Bake on Gas mark 6/350 F for 30 mins or until golden on top. Serves 6-8.
Can be eaten as a meat alternative as part of a roast dinner0 -
this one with peanut butter in is a fave in our house !
Crunchy Peanut Butter Bars
Category - Puddings and Baking
4 tbsp Crunchy Peanut butter
4 tbsp Clear Honey
100g Porridge Oats
50g Sultanas
1 tbsp stoneground wholemeal flour
Put peanut butter and honey into a saucepan and heat gently until melted.
Add oats, sultanas and flour. Stir until thoroughly mixed, with a consistency of crumbs.
Pour mixture into a cake tin (lined with greaseproof paper) and press flat with the back of a spoon.
Bake in a preheated oven, at 190C/375F Fan 170C Gas mark 5 for 10-15 minutes.
Leave in tin until cool. Cut into bars and remove from tin.
Store in tupperware to maintain freshness.0 -
