I've just noticed that the cottage cheese I've opened today says on it 'use within 3 days of opening' whereas the use by date on the pot is 12 December.So I wonder why it says to eat within 3 days of opening?
It will be free from bugs once it's sealed. While it stays sealed, it will be fit until 12 Dec.
As soon as you open it, it will start to deteriorate from bugs in the atmosphere, sticky fingers, and dirty knives being put into it. The manufacturers recommend 3 days.
That said, I use my senses to decide

My dad gave me a christmas pudding in January which i put in my pantry. It is made by 'Matthew Walker of Derbyshire', according to the packaging and is a ' Rich Fruit Christmas Pudding with Rum and Brandy' (though knowing my dad it wasn't an expensive pudding).
The only problem is i've just had a look at it and the best before label has been removed (to show the cooking instructions) so i haven't a clue if it's ok or not to eat? Sense is telling me it is ok, as puddings usually say 'best before' rather than 'use by' and also it has alchol in it......but would you use it on christmas day or buy another one just in case?0 -
If it looks and smells ok,I would eat it.
Cakes/puddings with dried fruit in keep for ages and it also has alcohol in.You could probably keep it til Christmas next year and it would still be fine!0 -
I would open it up and have a look, if it seems okay just wrap it up well again, you could also feed a bit more alcohol into it while its open.Slightly bitter0

I would probably eat it if it looks ok, these things can withstand anything short of a nuclear blast and have very long sell by dates. If you still are unsure you could ask your dad how long he had it before he gave it to you? I was given a pudding in Jan 2009 which I kept. We had it on New Year's Day 2010 and no-one has died yet!0

Matthew Walkers puddings are the BEST !!! (after my HM ones of course) If it has been stashed away unopened and untouched, it will be superbe! A good pud is always best the christmas after ! Enjoy ! (and remember to get one of this years in the post xmas sales )0
