  • I had a pork shoulder in the fridge that should've been used by the 23rd, but I've been out of town and forgot about it. I didn't want to waste, so I've put it in the oven for a ~12 hour 120deg slow roast overnight from 9pm (28th) and just checking it should be OK.

It was vacuum packed and it stated to expect a smell due to that, so I can't do the usual 'use your nose' test (and I'm a little bunged up anyway) so I just washed it as suggested, put in for 30 minutes at 230deg then lowered as noted previously. Should it be fine for sandwich meat for a day or two? If it tastes 'wrong' I'll naturally throw it out, but not sure if pork is one of those meats like chicken that's more of a worry.

I use stuff a day or two over date all the time, and use eggs that all but float, but this was a bit longer out than my usual 'sod it!' date. Cheers.

Off meat would get through a bunged up nose! the smell would also get worse as it cooked, so if your not gagging on the smell by now it sounds fine to me. Taste as you say is the next best test .

Chicken and pork need to be cooked completely and if re-heated must be piping hot all the way through. unlike red meats which can be eaten nearly raw (ie steaks cooked rare) white meats have bacteria that is killed off by cooking. 12 hours in a low heat sounds fine, but do put a knife in and ensure there is no blood in the juices, if your still worried cut down the middle / thickest part and check the colour of the meat.
  • I made some beef Bolognese sauce on sat eve, will it still be ok to eat tonight? It has been kept in the fridge since late sat night :)

Should be fine. I'll eat it if you won't. ;)
If you lend someone a tenner and never see them again, it was probably worth it.

If it's been kept at stedy temperture in the freezer, then it is perfectly fine. Frozen foods don't tend to go off, though the flavour and texture may deteriate somewhat as the months/yers go on. Quorn is not a meat product so you don't need to be concerned at all anyway.
