If you are going to cook it first (ie kill all the germs which might be lurking) then freeze then I'd say go for it!!
The only problems you might come across are the overcooking aspect of cooking the ham several times, it might get a bit tough.
Has no one else here bought a ham (bacon or any other meat), stuck it in the freezer, later defrosted it and made a pie/curry/etc etc which was then frozen again? I've done it before many many times. As long as it's cooked properly you are killing the germs (well you are happy to eat it at this stage, no?) and this germ free meat can be frozen.

i forget to check packets to say if they are suitable for freezing, the amount of times ive pulled something out the freezer and checked the label and do not freeze is on there.
i just make sure that i cook it in something like a pie or a pasta bake type thing so that its piping hot and its not done me any harm.
its you thats taking the risk, so what is your instinct to do with it?0 -

It will not kill you if you freeze it, but the texture / taste may not be as good
If it were me I would ignore the label, I generally do and I have survived since the warEight out of ten owners who expressed a preference said their cats preferred other peoples gardens0 -

Use By dates are the minimum time the manufacturer expects the item to last. They always leave them selves some leeway, so it should be fine to eat.
Just follow Happi's advice and you should be fine.0 -
