    I was so impressed we had it four times in a week :D:D (officially I was being MSE and using up the mascarpone). Also nice with penne pasta and baked in the oven.

    I have made it previously and all I did was empty a tub of passata (tinned tomatoes are just as good) into a pan and heat up adding spoonfuls of marscapone cheese into it until it looks a good pinkish colour then I add a little salt, pepper and a teaspoon of garlic granuals. This will serve 4 easily.

    hi there ive got some chicken and bacon and pasta but i was wondering about a sauce i could make to go with it does anyone have any ideas? thanks ash xx

    I'd just make a plain white sauce and add abit of cheese, either that or i'd use a tin of tomato's and make a spicy tomato sauce.

    Yep thats the way, once youve mastered the white sauce then anythings possible with it ( cheese, pepper, mushroom, mustard etc)

    Fry off some onions and garlic, then add your bacon. pour in your tomato's or passata then add some tomato puree to help thicken it and add more flavour. Sometimes i add a pinch of sugar to help take away the acidity. Add your pasta and cooked chicken. Mmmmm....

    If you have some herbs add them as well, depending what you've got and fancy.

    Here's my basic pasta sauce ...

    ITALIAN TOMATO SAUCE

    Enough for pasta for 2

    INGREDIENTS

    2 cloves of garlic
    2 onions
    2 tablespoons of olive oil
    400g tin of plum tomatoes*
    2 teaspoons of basil or mixed herbs
    Ground pepper to taste

    METHOD

    Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.

    Put the oil into a frying pan on a medium heat. Add the garlic and onion. Fry the garlic and onion for about 2 minutes. Stir frequently to stop it sticking.

    Open the tin of tomatoes. Put the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan).

    Put the chopped tomatoes into the pan. Add the herbs. Continue to cook, stirring as the mixture boils. Season with the pepper. Continue to cook, stirring as the mixture boils, until the sauce has reduced.

    ADDITIONS & ALTERNATIVES

    Add a glass of wine and cook for a bit longer. Drink the glass of wine and cook for the same time.

    Add ¼ of a teaspoon of chilli powder to make it into an Arrabbiata sauce, which is usually served with penne pasta.

    This can also be blended and used as a pizza topping.

    TIPS

    Always "take the pasta to the sauce". Put the cooked pasta in the pan with the sauce and stir together until thoroughly coated.

    * Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.
    The acquisition of wealth is no longer the driving force in my life. :)
