pasta sauce recipes

  • easy peasy carbonara I learnt from an italian - sorry, no real measurements, as I'm a 'see how it looks, give it a taste' type of person!
    depending on how much pasta you have, approx amounts for 2 people:
    2 medium eggs
    1 onion, or half if that's all you have got
    clove of garlic
    few rashers of bacon, or those little chunks (lardons?)
    load of grated parnesan or other hard cheese like that - I ran out and used strong cheddar the other day, turned out OK...
    Optional glug of cream.
    1. put your pasta on the boil (if it's not quick-cook, you should be abel to pull the rest off whilst the pasta is cooking)
    2. dice the onion nice and small, place in a frying pan on medium heat with the bits of bacon and the garlic (please put that through a garlic crusher, or mush it with the side of the knife and chop finely)
    3. beat the egg with plenty of freshly ground black pepper (the hotter the better!) and grate the cheese, whilst keeping an eye out to saute the onions etc. No need to add salt at all, because the bacon and cheese are salty.
    4. stir the grated cheese into the beaten egg. This is where you add the optional cream too.
    5. drain the pasta and turn the heat off the onions/bacon etc.
    6. put the pasta along with the onions etc back into the saucepan (you should not have any prt of your cooker on. If you have an electric cooker, you should probably try to do the next step away from the hob, or else you will get scrambled eggs...)
    7. pour the egg mixture into the pasta and KEEP STIRRING!!!!! The residual heat in the pasta will cook the egg and give a creamy sauce.

    113g can red kidney beans in chilli sauce
    onion
    chilli powder
    cumin
    garlic
    mushrooms
    Fry light



    Method
    Fry the onions, mushrooms and garlic in Fry Light until onions are translucent. Add the passata, chilli beans, cumin and chilli powder and simmer for 20 minutes.

    YUM!

    that's ok - to be honest, the cream is an added luxury - it will still be a great sauce without it.

  • I am currently eating pasta with tuna, onion, can chopped tomatoes and T v pasta sauce, bit grated cheese on top and its delicious. easily enough for 4ppl or 2 meals.

  • Garlic and chilli pasta is nice - just fry off some chopped garlic and chopped red chilli in a good glug of oil, and then when it's fragrant (not browned!) just add some cooked pasta (spaghetti or linguini is good) and mix it well so it's all coated in the garlic and chilli oil. Dead easy and dead tasty (although not one to eat if you've got to breathe on people the day after ;))

  • I was wondering where my post went :confused: I'm glad it's been moved and added on here, lots of great sauces mentioned ;)

    Well i made the pasta and it was lovely and very filling. I chose the tomato based one - onion, garlic, chilli, herbs (i used basil) and tin tomatoes... I think maybe if i had bought some tomato puree it would have been a little bit nicer...
