Definitely no with pork.
A butcher once advised me how to keep a large gammon joint for up to two weeks (wrap in greaseproof paper and change paper every couple of days as the meat shouldn't be kept in damp paper) but said not to keep a pork joint for more than 2 - 3 days so a casserole would be at least the same.Be nice to each other

No, especially not to kids who wouldn't have a choice in the matter. I wouldn't even risk it for myself actually though.... Unless I was starving. A weeks a long time for bacteria to multiply.0

I brought some mince in Sept of last year as it was on offer and froze it the same day.
Its obviously well past its use by date but as i froze this straight away, will it be safe to use and eat?

Yes! I often eat meat which has been in the freezer 1 year +
I would say you should defrost it, smell it... if it's okay... eat it!
