You could always use my default recipe for vegetables (I've done this with broccoli or leeks before now - and mushrooms would work too).
That is - steam the vegetable concerned and then put it in a casserole dish with some sauted up onion and garlic mixed in. Then either:
- put cheese sauce over the top and then top off with a layer of breadcrumbs, few slices of tomato and few dabs of butter and bake in oven
OR
- forget the cheese sauce. Instead chop up some tomatoes and put as a layer on top of the cooked veg. Then top off with that layer of breadcrumbs (only this time mixed up with grated cheese). Then put few dabs of butter on and bake.

I've worked out a very nice vegan variation on that - and that is that I use a tahini sauce instead of cheese sauce (that is mixing some tahini with a bit of warm water, some olive oil, some lemon juice and a bit of salt and pepper) and pour the tahini sauce over the vegetables instead. There's a couple of peeps on the vegan thread who said they would be trying that when I mentioned I'd worked this recipe out.

wow how quick is that some great ideas there I am going to make my DGS some small iced cakes this morning for after school so a quiche sounds good I do seem to have a bit of a glut on my eggs at the moment plus once cooked and cold I could freeze half for the weekend Well done chums I knew you would come up trumps .I'm doing my best to stay away from shops this month so this will be a bit of inspired thinking I had originally meant to take it with me on Sunday to dd's I like to help out a bit if I see a bargain and this head of broccolli was really quite big and reduced to 25p so a bit of a bargain.I certainly wouldn't bin it so it lookes like quiche for dinner tonight I also could have a small jacket spud with it and a shredded carrot and tomato side salad .You've got my creative juices going now

Errrrmm....I would just take it that she was quoting you for some reason and then meant to add her own bit on (but it didnt come up on screen for some reason) - say a variation she had thought of to adapt your recipe idea....

I make potato and broccoli bake...at the risk of copying others yup, it's just part boiled spuds and blanched broccoli topped in cheese sauce and finished off in the oven! Works well with cauliflower too, or a mix of cauliflower and broccoli (different blanching times to get them part cooked) and maybe chunks of sausage or left over ham, bacon or cold roast meat for a more substantial dish.
I got two cauliflowers and a big head of broccoli in the whoopsies section last night for 8p each, so I guess i'll be making bake too tonight or tomorrow!Val.0 -
