Broccoli and Oatmeal soup
1lb broccoli cut into 1" pieces
1 tbs olive oil
1 onion chopped
salt and pepper
4 level tbs porridge oats
1/2 pint milk
1/2 pint water
heat the oil and fry onion for 2 mins. add the broccoli reserving a few florets, season and add liquids and oats, simmer for 20mins. Liquidise adding the reserved florets at the last minute for a bit of crunch.0 -

Just one question. I cannot stand mushrooms - is there an alternative to the campbells condensed soup used in a couple of recipes????

In the GORGEOUS (even if I do say so myself!) recipe I gave (the one with the broccoli, chicken and white sauce with currry powder) you can't really taste the mushrooms and the bits are so small from the soup you can't cant get the texture from them either (I don't like mushrooms either, you see) but if you're still not convinced you can use condensed ham and wine soup instead. It is NOT nice with cream of chicken soup.

I will give this a go - thanks for the tip about the cream of chicken as that's what i would probably have picked up. will try the mushroom soup version - can't say i don't like it until i have tried it i guess!!! :rotfl:r.mac, you are so wise and wonderful, that post was lovely and so insightful!0 -

Tastes yummy, mayo gives t a nice tang. We never ever have this any more, its too fattening
Going slightly off subject but you could just leave out the mayo & even cut out the cheese or use less cheese but use parmesan instead as it has a much stronger flavourLadymac0 -
I like Broccoli + Nutmeg Soup - broccoli, onion/garlic, bit of potato, stock, nutmeg, cooked and blitzed in the blender. Add a bit of cream/milk to your taste.
Spaghetti with olive oil, garlic, chilli, steamed broccoli florets and toasted pine nuts. Add chopped flat leaf parsley or basil and lots of black pepper.0 -
Me and the kids eat loads of plain steamed/boiled broccoli -none of us much like it really but it's good for us (can't get OH to eat it at all). Why does it go cold so quickly ?
Anyway inspired by Hugh FW's courgette recipe and other fab vegetable dishes in his cookbooks I wondered if anyone has new and exciting ways with broccoli. Side or main dish ideas welcome0 -
I put some soy sauce and/or toasted sesame seeds and/or sesame oil - to taste basically!
Or I quite like in quiches. Or with cauliflower and/or leek with cheesy sauce (not quite so healthy!)

Stir fried with ginger, garlic and soy sauce (tiny bit of chilli goes well too)
Plain steamed with a little dollop of pesto and a few pinenuts stirred through (goes lovely with pasta - add some fresh parmesan :drool:)
Cold broccoli salad - heat whole garlic cloves (peeled) in oil for about 15 mins then transfer into a jug and add a few chilli flakes. blanch broccoli, refresh in iced water, drizzle over a little of the garlic oil and the whole garlic cloves. toss through and eat. add a splash of soy if you like it saltier.

We love broccoli too, been eating our home grown for weeks but finally used it up and went to asda to get some yesterday to find a notice saying no broccoli as suppliers had been affected by the adverse weather:mad:
we love it in pasta dishes, added to quiches and omelettes, in stir fry, broccoli and stilton soup, with cheese sauce over it, and just on its own:D0 -
I like making Linda McCartney's recipe for Broccoli and goats cheese flan.
Basically a quiche with Broccoli, onion and goats cheese. Delicious.;)I wish you......
