  • Cut the broccoli into small pieces, with short stems steam until it is JUST cooked.

    Lay in the bottom of an oven dish and place bite size pieces of cooked chicken on top. (chopped up chicken breast, or the dark meat from a roast etc)

    Make a white sauce (about a pint of milk) add 2 small or one large tin of condensed cream of mushroom soup, add a big dollop of mayonnaise, some curry powder, stir it all up and pour over the chicken and broccoli add some grated cheese on top and bake until cheese it golden and bubbly.

    This is totally gorgeous especially now it's starting to get chilly in the evenings - you'll be glowing from your tummy all evening (especially if like us you always make enough to have leftovers but never seem to have any left over!)

    We love a really simple version of the cheesey pasta dish already mentioned a couple of times. You cook the broccoli in with the pasta, and then stir through some Boursin and a little chilli oil (the oil loosens the Boursin and also gives it a little kick!). :D

    Simple one pot supper in minutes - very yummy and tasty, and you can vary the ratio of broccoli/pasta, depending on how healthy you want to be/how much broccoli you have.:p You can also use frozen broccoli in this dish because the broccoli does break up a little when you are mixing the Boursin through.

    Looks kinda "green"...but the taste is delicious! ;)

    CHICKEN & BROCCOLI PASTA
    295g can of condensed campbells chicken soup,
    1 small onion - chopped
    2 chicken breast cubed
    150g pasta
    1 carrot - chopped
    200ml milk

    Cook pasta, broccoli and carrot together in boiling salted water until tender. Drain.
    Meanwhile, heat a fraying pan, add the oil and stir-fry chicken and onion for 10 minutes. Stir in soup and milk and simmer 5 minutes, stirring occasionally.
    Stir in pasta and vegetables.
    Serve with salad or crusty bread.

    Try this recipe with turkey too.
    Campbells Condensed Cream of Mushroom Soup would go well in this recipe too.

    OR

    CAULIFLOWER & BROCCOLI CHEESE
    175g (6oz) broccoli florets
    350g (12oz) cauliflower florets
    295g can Campbell's Condensed Cream of Mushroom Soup
    150ml (1/4pt) milk
    150 g (5oz) cheddar cheese, grated

    Boil vegetables in a little salted water until tender. Drain and transfer to 1.2lt (2pt) flame-proof dish.
    In a small pan, whisk soup, milk and half cheese and heat through.
    Pour sauce over vegetables and top with remaining cheese. Grill until golden.
    Serve with crusty bread and tomatoes.

  • I used to use a head of cauliflower, broccoli, carrot & onion & add a some curry sauce (home made or you can buy a jar!!!

    I watched a Delia Winter Collection the other day and she made a fab broccoli and 3 cheese souffle. Also works with courgettes in summer apparently:

    very similar to crazychiks chicken and broccoli pasta.

    Chicken and Broccoli Pie
    (our quorn on our house as we are veggie)

    1/2 lb quorn/ chicken pieces
    large head broccoli
    1/2 tin campbells condensed mushroom soup
    1/2 of the tin amnount of mayonnaise
    1/2 of the tin amount of milk ( add this carefully until sauce looks almost too runnY)
    cheese and breadcrumbs
    cook broccoli til al dente
    brown chicken/quorn
    mis 3 sauce ingredients
    lob quorn and broccoli in caserole
    pour in sauce and stir gently
    top with breadcrumbs and cheese
    bake in oven half an hour

    Tastes yummy, mayo gives t a nice tang. We never ever have this any more, its too fattening :(

    The results indicated that steam-cooking of broccoli results in an increase in polyphenols, as well as the main glucosinolates and their total content as compared with fresh broccoli, whereas cooking in water has the opposite effect. Steam-cooking of broccoli has no influence on vitamin C, whereas cooking in water significantly lowers its content. Both, water- and steam-cooking of broccoli results in an increase in beta-carotene, lutein, and alpha- and gamma-tocopherols as compared with fresh broccoli. Similar effects of steaming and water-cooking of broccoli on their antioxidant activity were observed

    So STEAMED brocolli is better than uncooked or boiled brocolli.

    Don't think i am going to have a glut for long. these look great - thanks guys.

    Just one question. I cannot stand mushrooms - is there an alternative to the campbells condensed soup used in a couple of recipes????
