    Leftover home-made mushroom & Stilton ravioli and homemade Napolitana sauce tomorrow.

    Leftover uncooked mushrooms and cream for mushroom Stroganoff on Saturday.

    Leftover roast topside of beef and home-made gravy on Sunday.

    Leftover uncooked salmon and home-made white wine sauce on Friday?
    If you fold it in half, will an Audi A4 fit in a Citroen C5? :)
  • Risotto for us! And I've just had a turkey and ham salad. Will also be using cold cuts in sandwiches for the next few days. Usually that uses it all up for us but we accidentally bought a much-too-large turkey this year so we may have to find a few other use-up recipes.

    Leftover champagne? How friendly are you with the neighbours? As an aperitif before Boxing Day whatever's, it has the relevant magic & sparkle - if they're not on antibiotics etc...

    And the 2lb of mash has become three sorts of Christmas Veg Soup (with/without chilli, carrot, &/or parsnips...)

    Years ago, I used christmas pud as a topical application to an inflamed knee joint. Eased the pain, put beyond eating the pud & caused local entertainment the TV couldn't match...

    we didn't have a lot of leftovers this year as we didn't have a full bird....so everyone had, turkey and stuffing sandwiches for lunch. Theres a few sprouts left in the fridge but i'll make some bubble and squeak tomorrow.

    Not exactly leftovers but does anyone have any suggestions for using four packets of fancy stuffing mix. I bought two packets for BILs hampers but they ended up in my store cupboard and I only found them on Christmas eve after we had delivered the hampers. Then we got a hamper from BIL containing-two packets of stuffing mix!They have a use by date of 2015 so it's not urgent .

    I could put a couple of packets in the food bank but would they want anything like that?

    If they got 2015 use by dates on them, why don't you use one at Easter, and then the other one for next Christmas...

    Add to mince and sausagemeat to make a meat loaf. Or a nice addition to a midweek roast.

    You can always add the stuffing mix to other things.....I'll add half a pack to a tin of whizzed up butter beans, some fried onions and peppers and add some water until you get a firm mixture....shape into burger shapes and grill or oven cook. Add some to mashed potatoes (again, add enough after to get to the desired consistency) and use for topping a leftovers pie. Make into stuffing balls and add to toad in the hole (the balls freeze well so just add a few to your sausages when cooking).

    We have loads of meat left and I will portion into bags for the freezer. Some will be sliced and used for sarnies etc, other bits I'll cube for pies/pasta bakes etc. we always cook more than we will eat so that we have a nice selection for the freezer.

    The left over veg will get bubble and squeaked, the uncooked veg will get prepped and frozen if it won't get used this week.
