    What leftovers?


    We have cold turkey and stuffing with chips and beetroot next day :)

    The dogs have a fair bit to eat but we have to be careful to make sure they run it off so they don't get fat.

    Hi sausagesandwich,

    We use any leftovers as buffet meals in the day or two after Christmas. Anything after that gets frozen to use in meals later. These threads may give you some ideas:

    sandwich late at night on christmas day, cold cuts the next day and a curry the day after for the turkey. We don't buy a huge bird. If we have goose there is nothing after boxing day left at all. sprouts/potatos become bubble and squeak on Boxig day (breakfast or supper with whatever else). Anything else gets hoovered on boxing day/sandwiches. Part of the trick I guess is not to over buy!

    What leftovers did you have in mind - meat, veg??

    Layer, any leftover stuffing, turkey, ham, cranberry sauce and carrots pour over some gravy and top with mashed potatoes put in the medium oven for about 40 - 45 mins and you have a delicious pie.

    Or you can mash up all the leftover veg with a couple of fried onions, some cumin and hot paprika - form into burgers, coat with egg and breadcrumbs - then fry them.

    Or, if you have cauliflower and/or broccolii, add chicken stock and some milk and make cauliflower & stilton soup.

    Invite a few teenage boys round, they'll sort it all out :)

    But failing that, we freeze and portion things up. otherwise, cold sandwiches, cold cuts with pickles and rolls, then the inevitable curry and pie :)

    I love Boxing Day. We have a big fry-up. Mash all the left over veg together fry and serve with turkey and stuffing. For tea whatever we fancy thats leftover usually a sandwich, dips, hummus etc, Then theres the chocolate, cake, raspberries and meringue etc.

  • Oh where do I start? I make extra especially to have Christmas dinner leftovers cos I love them. Christmas dinner pasties are a family fave make a mix of left over veg and turkey together with some bits of stuffing and moisten with some gravy then use that as a pasty filling it also freezes wonderfully (just the mix) and it's wonderful on a cold, dank, horrid February day when you open the freezer up and realise you can have Christmas dinner pasties for dinner.:D

    Cold cuts and chips, turkey, stuffing and bread sauce sandwiches, turkey pie and finally when all else has been squeezed from the bird turkey soup from the carcass - roll on boxing day. (Yes I know I'm weird my family have been telling me tha for years!:rotfl:)

    The BIG Christmas Buttie:

    2 thick slices of buttered bloomer bread, spread with some pate if you have it, top one slice with mayo and the other with cranberry sauce and fill with hot ( nuke in microwave) sliced turkey, bacon and sausage, stuffing and lettuce.

    Spear through with a cocktail stick to hold it together and devour!

    YUM!

    Christmas Coronation Turkey:

    Mix, mayo, natural yogurt, curry paste and a huge dollop of fruity chutney and use to bind chopped turkey and chopped tinned apricots. Serve with rice, salad, jacket pots etc.
