    I don't get one of those turkey crowns either, it's about presentation. A crown just doesn't look superb on the table, the way a bird does.

    There will be loads of leftovers, we like turkey, beetroot and chips on Boing Day but as we have family coming round we'll have a lazy buffet instead. Still it's a big 'un this year so I might freeze a breast for another day.

    I love to pick at the turkey when it's on the plate in the firdge, every time I brew up I'll rip a piece off when I get the milk out :cool:

    Then there's the dogs, they have their fair share.

    My fave Boxing Day leftover meal is Turkey and Cranberry on jacket potato with Cheddar cheese- it tastes YUMMY! With cold pigs in blankets too.
    Also, turkey biriyani, turkey curry and turkey and sweetcorn pie.
  • I've purposely made lots extra so that I can have a few xmas dinners over next few weeks :D I will have LO nut roast, lentil pie, stuffing and veg. Most of which will be frozen in portions if not eaten by Boxing Day night

    Yes, absolutely this will work with duck fat. Or any other solid-at-room-temperature fat (dripping, lard, etc).

    What I forgot to add was that if you don't "wash" the fat, any impurities in it will eventually go mouldy after you expose them to air. Which is why that stage is necessary. (I learned this the hard way.)

    Mmmm maybe I was a bit optimistic! :rotfl: There is plenty of LO lentil pie and nut roast (bout 8 portions), but only enough verg for one meal! AH well everyone enjoyed so that's the main thing!

    I have a couple of old ice cream tubs in the freezer,any leftovers (spuds,parsnips,sausages ect) go into that so I can make an easy mael out of whatever I have in there,just defros & bung in the microwave for a few minutes...
  • Pip, thank you! I'm being very good and am sat here (with a very full belly!) meal planning so nothing goes to waste!
    Love the idea of 250g bags of meat in the freezer.
    Have loads of stuffing & pigs in blankets left, apart from sandwiches, any great ideas for them?

    I bought a big turkey, cooked it and froze it and this is despite the fact we weren't having Christmas Dinner here! We just like turkey meat and it was available (a whole turkey isn't usually easily available here).

    We'll have a couple of roast dinners (we portioned the meat out for this), turkey brie and cranberry baguettes, asian style turkey rice paper rolls, satay turkey noodles, turkey curry, turkey tacos.... you name it, I'll put it in it!
