After some advice please.
I have got half a gammon, half a turkey crown and half pork loin left plus tons of cooked veg.
The turkey crown said so not refreeze - will this be the same for the other meats too?
If i do freeze do i just let it thaw before warming again/eating cold?
Can i freeze the cooked veg - wont it just turn to mush?

Ohhhhh - and one more - if i decide not to freeze how long would you safely keep it in the fridge till?

Like others, I'm scandalised at the notion that there's a lot of waste on a bird. I actually shiver at the thought that there are people out there throwing out a turkey carcass today without taking the oysters off first. Anyway, my rough leftover plan:
Not sure what we're doing today -- we are dancing and mumming with the Morris (at several pubs) this lunchtime, and then at a friend's for an 'at home'. Suspect we will not be very hungry after that but if we are then it's bubble and squeak tonight with the remains of the roasties, sprouts and parsnips. Tomorrow we will have my family's traditional Boxing Day meal (cold meat, salad and baked potatoes, cranberry and bread sauce). The rest of the dark meat and some of the white will go into a turkey curry of some kind (aiming to serve 8 in a make one freeze one way), and the leftover mash will become gnocchi (with the scrag ends of the cheeseboard). We will have turkey and cranberry toasties at some point too. There will obviously be a massive turkey soup as well as stock for the freezer (which I freeze by the half pint). I have some leftover fats (pig fat from pigs in blankets and stuffing, lamb fat from the Christmas eve meal, goose fat from the roastie tin, plus there will be fat from the stock pot; I'll probably use them all up quickly over the next couple of weeks rather than rendering it. Any remaining white meat will be frozen in risotto-sized amounts. Leftover pudding, nibbles and so on will get eaten when people are peckish. The cake I am slightly worried about; we ate less than a quarter of it yesterday. Chicken soup recipes work a treat with duck. Had Christmas dinner at my sisters yesterday and came home loaded with most of the veg leftovers - cauliflower, broccolli, parsnips and 2 large ice-cream containers of cooked sprouts :eek::eek:!!
Any ideas for this massive pile of sprouts?? There are only the two of us.
I am going to make some into bubble and squeak "burgers" and then freeze them - but am at a loss with what to do with the rest of them. OK, I know I could just bin them - but I refuse to go down without a fight first :rotfl::rotfl:.

I dont have any cream to make a curry with Pataks curry paste, but i do have coconut milk, will this be OK instead do you think? Will it cool it down like cream does?0 -

Assuming you bought the crown rare it will be fine to freeze teh cooked meat - it meand don't thaw and then refreeze raw. Personally I always think you can taste the difference when you freeze and then thaw plain meat so I always put in gravy etc, or reheat in a spicy sauce.

Personally yes, I would keep 4-5 days.
No turkey for us this year so a bit traumatised by the lack of leftovers. Pheasant stock made last night and now mixed with a bag of stir fry veg & herbs & spices in slow cooker to make that well known delicacy of Spicy Thai Pheasant Soup

The pork mince I CBA making stuffing with yesterday is turned into meatballs, currently simmering in SW HM tomato sauce.
Left over smoked salmon blitzed with diet cottage cheese to make a lovely low fat dip (have already quality controlled it vigorously with the remains of the Doritos).
Left over pheasant and lamb will be making Green Thai Surprise Curry tomorrow.
Left over veg will be bubbled later :j, maybe with a poached egg.
How virtuous I sound :rotfl:. Currently looking for ways to use up the left over wine. Think I've found one.

I wish we had leftovers left. We shared a huge turkey with my parents and we had the two breasts. This morning I went to the fridge to plan some meals and all the pigs in blankets, roasties, parsnips and stuffings had been eaten as had most of the turkey. I guess this is what happens when you have four adult sized kids (two teens and two twenties) still living at home. Still there is some trifle left but Im out of it today as my tummy is unhappy. Be careful to store those leftover properly and reheat thoroughly.I must not fear. Fear is the mind-killer.
