this thread is great! its helped me focus on dismembering my turkey and leftover gammon into manageable portions.........I am doing my all purpose leftovers dinner of what my kids call pink pasta, its a basic tomato sauce into which I dump half a pack of cream cheese and it goes with a lot of different meats including poultry gammon etc and I also use up cold meats like chorizo with it too....I got a nice cheeseboard from M+S but its untouched, any useful tips to use up particularly goats cheese?Every Penny's a prisoner :T0

Great ideas on here! have almost used the last of the smoked salmon ( scrambled eggs this morning!) and suspect DS will eat the rest tonight for supper. The idea of bagging turkey bits had never occurred to me - brilliant - that'll mean we can have turkey curry over a number of weeks! Before I've only frozen slices and then used the rest up in dishes over several nights. The gammon I shall slice and freeze in useable amounts, so much cheaper than the packs of sliced ham from the supermarket!Resolution:

we had turkey crown this year (not very impressed with it -but thats another story !!) i always 'double up' when cooking christmas dinner -i serve half of it on christmas day, pop the rest in a foil turkey tin -covered with foil, and just pop this in the oven for boxing day !!!
today we had turkey stir fry, tommorow it will be turkey fajita's -also have had turkey rolls for lunch with curried mayo -lush !!
then that will be it for the turkey -apart from the pieces i put in the freezer before i cooked the crown !!0 -
My old man's on the giblets from the Christmas Day goose, as we speak.
Cooked with onion and herbs and a stock cube, in a broth.....served with a few slices of bread.
I've had a few bacon wrapped chipolatas and a few stuffing balls.Felines are my favourite

I can't get enough of them!
Failing that, the only thing we usually have left over is stuffing and chicken and both get bagged up and put in the freezer for other meals later on.Princess Sparklepants0 -

My mum had a turkey, a chicken and a gammon so I got to bring a shed load of meat home which has all been bagged up and frozen. Bacon pieces I had have been frozen and we have actual rashers of bacon!! (My mum wasn't using them, I normally use cooking bacon), stuffing has been bagged and frozen, I have tons of it in the freezer now, we have it in place of meat as a roast sometimes but can easily add it to other dishes. The veg has been used up so no need to worry about that.
I had to cook 2 chickens today so I made stock with the bones along with curry portioned for the freezer, we had some for dinner with cauliflower cheese and will be having some with rice in a couple of days and the rest will be portioned and frozen ready for various meals. My freezer is bursting along with cupbaords so no having to shop in January apart from fresh basics yay!

I have worked back to front this year, being in the kitchen pre-preparing stuff for dh's time at home so I wasn't in the kitchen all the time, I've cooked and forzen quite a few lighter fresher meals for this week and have few leftovers. we had leftover lunch which dealt with most of it. we have some cold, beautiful rare roast beef left, which won't last brilliantly, but will get finished tomorrow, probably with ''swedish'' potatos.
personally I would buy a whole bird not a crown when buying ''bird'' for christmas, the bones make a stock perfect for left over veg to have a long side cold cuts or with a fresh home baked bread after a long winter walk.

Oh, of course. Also called something like Johannes Delight...a little like dauphinoise, potatos, thinly sliced, then a layer of finely chopped onion and chopped anchovies then another layer of potato, small knobs of butter over the top, then cream ...(I know, I know but its the holiday season) then in the oven. Very comfort food-y. In fact though, we doidn't have that, be cause somehow I have run out of anchovies!
But we did have the very last of our beef today with leeks and peas and a stilton cream sauce instead.0 -
just made my own version of jamies turkey chowder but need some help as it is far too thick, what should i do to make it abit thinner?0
