I brought home the l/o veggies, gravy, stuffing and pigs in blankets from my Mum's as well as quite a lot of turkey. (She bought one marked as "To feed 10-12 people". There were 3 of us......)
I've had bubble and squeak twice - lovely, luxury b+s with stuffing, chestnuts and pigs in blankets mixed inwith the reheated gravy. Totally delicious! There is also a box of b+s "mix" in the freezer for the next time I fancy it. Three times in three days was a bit much, even for me...
There is a turkey curry bubbling away in the slow cooker to be portioned up for the freezer later. That has taken care of all my left overs.
I may have to go shopping tomorrow! :eek: (I'm reviewing my freezer inventory first though)0 -

Is it a decent fridge - does it keep things properly cold normally?
Does the meat look and smell OK?
I'd have no problem with either using it today, or freezing it for future use.0 -
Using leftovers from the fridge I made; turkey & ham pie, ham & mushroom quiche, turkey & ham pasties (l/o pie filling) and celery soup. I have lots of turkey still left over so will make thai red curry tomorrow.Cat :wave:0

Bubble, squeak & oink for dinner tonight to use up the last of the potatoes, veg and some ham.
Have a huge pan of turkey stock cooling outside the back door that will be made into turkey, noodle and sweetcorn soup.
The remaining breast and (super delicious) gravy are in the freezer
there's a pan of turkey taco mix on the hob, with loads of fresh peppers and mushrooms.
Lunch today was turkey sandwiches. And I'll probably do a curry tomorrow for the freezer :eek:
Phew. It was a whopper.- prior planning prevents poor performance!

Not exactly leftovers but does anyone have any suggestions for using four packets of fancy stuffing mix. I bought two packets for BILs hampers but they ended up in my store cupboard and I only found them on Christmas eve after we had delivered the hampers. Then we got a hamper from BIL containing-two packets of stuffing mix!They have a use by date of 2015 so it's not urgent .
I could put a couple of packets in the food bank but would they want anything like that?
I used a lemon and thyme one with some cheap sausagemeat and some puff pastry to make a sausage plait - the OH said I could make it again any time I liked.
We are trying this tonight to use the leftover roasties, gammon and other bits and bobs up, I saw it last Sunday on Sunday brunch and we both thought it looked delicious:

I'm guessing it could easily be adapted to whatever you have to hand.
I have a litre of stock left over from cooking the gammon in cider in the sc on Christmas eve (and blooming lovely it was too!). I've kept the onion, bay leaf, carrots and celery in the stock, any ideas what I can do with it to make it into soup?Good enough is good enough, and I am more than good enough!:j

So far I made turkey and veg soup and two turkey, ham and leek pies (using roux, stock and milk).
Still need to do a curry...
I too have a LOT of mincemeat so will read through for ideas for that too.

We have lots of lovely leftovers. The spare mash, parsnips and sprouts will become bubble and squeek tomorrow. I'll serve that with a slice of lo gammon.
The lo pigs in blankets are going on todays buffet and the rest of the lo gammon will become carbonara. Lo beef and gravy and whole roasted onions will make a pie at the weekend.
I don't know what to do with the lo sausagemeat stuffing yet? It is more like a meatloaf.
Anything lo from tonights buffet will become tomorrows lunch.£36/£240
