  • I wash the potatoes, !!!!! them with a fork and then wrap in kitchen towel before popping them into the microwave. You may find they cook a bit quicker than regular spuds so careful not to cremate it; I usually do mine for about 3 mins than turn it over and do another 3. When cooked they're really creamy and don't need butter (YAY - another saving!). Stick a sharp knife into it before cutting it open - if there's any resistance, then microwave a minute longer.

    I have mine with tuna, fresh coriander, finely chopped red onion and pine nuts - the mayo is up to you!

    I read the perfect accompaniement to baked sweet pots is a chilli butter. Made with lazy chillis & butter - i read this in the observer food.

    Never got round to this but sounds YUM

    Just found a pack of sweet potatoes lurking at the back of a dark cupboard :o - I had been planning to puree them for my baby.

    They've got a use by date of 8 April but they look ok, a few little sprouts but looking and smelling fine other than that.

    Am I ok to still use them? I often use veg after the use by date, but never a month after!

    I'm sure the Old Stylers will know :D

    use by dates on vegetables are meant to be ignored... i personally think it's a ploy by supermarket who are just trying to make people buy more stuff... IMO, if it ain't got beard growing on it or have a foul smell, it's fine...

    I never pay any attention to useby dates on fresh veg :) unless it's gone mushy and yucky you'll be fine to use it :)

    Cheers, that's what I thought - just the fact that it is for my little bub that made me seek a second opinion! I guess it isn't as nutritious as it would have been if I'd used it immediately, think the vitamin content decreases with age.

    You would know if the sweet potato was off - they go all soggy and stink!!!!
    They have best before dates, not use by, so you should be safe if they are still firm and no bad smells.
