    the sweet potato thread should have plenty of ideas. Don't panic and don't throw them out:eek:! You can make chips, spicy wedges, roast them, use them in a different type of soup, make mash - the jamie recipe looked fab , sorry ive no time to find it now

    i second the wedges :drool: also i often use them instead of normal potaotes on top of shepherds pie.

    Make more soup!! I made curried sweet potato and carrot soup last night and it was nom nom nom. :drool:

    Why would you through it away?

    Sweet potato and spinach curry
    Sweet poato and butter/kidney bean salad
    Sweet potato mash (also used to top pies with)
    Roast sweet potato

    or you could make more soup and freeze it
  • Great, thanks for all the ideas everybody. Never tried sweet potato before so had no idea about all the yummy things I could do with them.

    my grandkids love sweet potato mash but I sometimes find it goes a bit watery - so I add a normal white potato cut up into chunks before cooking, and find this gives the sweet potato mash a bit more 'body'.
    personally I like roasted sweet potato and sweet potato chips - they also make delicious crisps!

    They make lovley jacket spuds, Also roasted. Addt then to stews to help them thinken.

    Sweet spud are lovley, they are also one of the new super foods

    If you cut them into small cubes about (1 inch) and roast with some roughly chopped onion until the sweet potato is nicely squishable and the onions are caramelising round the edge they make a fab quiche filling, just chuck the roasted pots and onion in the base of a blind baked quiche case and top with some beaten egg and milk and you'll have yummy lunch hot or cold. Jazz it up with some roughly chopped walnut (buy the broken bits as it makes them so much cheaper) and some chunks of blue cheese and maybe do individual ones and it's posh enough for a veggie dinner party main course or make smaller ones for starters.

    Sweet potato is also yummy as mash, add some chopped and lightly sauted spring onions for colour and to add another flavour and they work really well together.

    I also make a cajun inspired dish layering sweet potato, yellow pepper and shallots together and sprinkling with cayenne and oil before roasting til caramelised round the edges which is really nice with cajun blackened chicken breasts.
  • Oooh I love that quiche idea!! I could take that for my work lunches, I love having different homemade things for my lunch while my colleagues look at me enviously with their boring sandwiches. Lol.
    Think I'll do that with one and do some wedges with the other. Could I freeze the wedges once cooked?
  • Chopped into chunks, drizzled with olive oil, sprinkled with fresh chopped rosemary and sea salt, then roasted. Delicious.
