    Can you eat the skin on sweet potatoes. I usually make mash with normal potatoes, skin and all, and I was wondering if I could do the same with sweet potatoes or do they have to be peeled?

    I've not made mash with skins of sweet potatoes, as the skin is more fibrous than that of a normal potato, but they do make good jacket potatoes - we do them in the microwave.
    Enjoy the little things, for one day you may look back and realize they were the big things.

    Just treat them as normal potatoes. Yes you can eat the skin. It is delicious with a little spice sprinkled over before baking - cayenne/chilli etc

    I'll merge this with the sweet potato thread so you can other ideas :)

    I've just made a nice sweet potato and red pepper pasta sauce which I've portioned up and put into the freezer :D I'm hoping to have it with gnocchi and take it to work with me for lunch. Here's what I did...

    1 bag of Value sweet potatoes (mine had 4 or so small ones in) I peeled and chopped mine
    3 red peppers, deseeded and chopped into largish pieces
    1/2 pint chicken stock
    1 small carton passata
    1 clove garlic, crushed
    2 tsps mixed dried herbs

    Basically, when everything is prepped I put it into the slow cooker and let it cook on low for 4-6 hours. Then, I blended it into a nice thick sauce. Hope it helps. :)

    I am in the middle of making Roasted Sweet Potato and Red Onion soup. I got it from Prima originally, and promised FlutterbyUK the recipe, but can't find it.
    So this is what I do.

    5 sweet potatoes
    3 red onions

    bith chopped into similar sized chunkes, tossed ina a little olive oil, chilli powder oregano salt and pepper and roasted for about 30-45 mins,

    Punt into a put with some sweated down carrot and celery (i large carrot and 2 celery sticks for me) and add vegetable stock, bring to the boil and simmer for about 15 minutes, puree with stick belnder, and season to taste.

    It's delicious, very simple to make and adaptable. I make it with just the sweet potatoes and onions and stock if I don't have celery or carrot and it tastes delicious like that too! The Sweet potatoes and onion mix is nice too just as a vegetable side dish with dinner.

    I love sweet potatoes - i normally do them in the microwave, cut in half put a little flora on and then sprinkle with a mixture of cinnamon and light brown sugar. It is amazing and i happily eat this with a salad or a spoonful of coleslaw. Once my new kitchen is installed (starts on Thursday yay!) i will try them in the oven. Not done this before as current oven doesn't really work and hasn't done for quite a while, hence one of the reasons for a new kitchen.

    OK I didn't see the last sweet potato when I made soup this week so I now have one lonely sweet potato with no mealmeal plan to match him to! :o

    I am doing our next week of meal plans so.....

    What would you do with it? :D (there are 3 of us but 2 have little bites ;))

    I'd use it in a spicy sausage casserole. Or roast chunks of sweet potato, sausage, red onion, peppers sprinkled with cumin and oil, served with rice.
    OR do half sweet half regular mash because that is delicious!
