I buy loose veggies as opposed to prepacked stuff as they are generally cheaper.....which has the added bonus of no sell/use by dates so they last forever! If they look/smell okay they'll be fine to eat.0

I have two suggestions -
Firstly a dee-lish-ous Donna Hay recipe I made last year 'Sweet Potato and Sage Tart' recipe to follow....
Secondly I searched and found a recipe for sweet potato pie filling and sweet potato cookies on the same blog! No need to get tired of sweet potato now!

Sweet Potato and Sage Tart - Donna Hay 'The New Cook'
Serves 4-6
Ingredients
8oz shortcrust pastry
750g sweet pots
4fl oz sour cream
3 eggs
2tbsp chopped sage
1 tbsp honey
2 tsp ground cumin
1 tsp grated nutmeg (seemed a lot to me, I used 'some')
Black pepper
Method
Roll your pastry to fill a 9" tart tin. Put in fridge.
Boil sweet pots until soft. Drain and put in a food processor with the sour cream. Process until smooth. Stir through all other ingredients.
Spoon into the pastry case and sprinkle over a few sage leaves (for decoration). Bake at 200C for 35 mins or until set. Allow to stand for 5 mins before serving warm or cool.0 -
