OK I didn't see the last sweet potato when I made soup this week so I now have one lonely sweet potato with no mealmeal plan to match him to!
I am doing our next week of meal plans so.....
What would you do with it?(there are 3 of us but 2 have little bites
)
Do you ever eat alone? I'd bake it and eat with butter and cheese for a lunch at work

How about these -
Sweet Potato Patties
Cut 7oz of regular potato and 7oz of sweet potato into chunks and boil until tender.
Drain and allow to steam dry for a couple of minutes before mashing.
In a small pan, heat 1 tsp of olive oil and gently saut! 1 finely chopped garlic clove and 1 diced shallot for 2 mins (I used lazy garlic and an ordinary cooking onion).
Add ½ tsp cumin seeds and 1 tsp khalonji (black onion/nigella) seeds and cook for 1-2 mins more.
Mix into the mashed potato - Season - then shape into 4 patties and coat in a little flour.
Fry in a little olive oil for 2-3 minutes on both sides until golden.

I'm making sweet potato and chorizo soup which requires 800g of sweet potatoes. However my weight judgement must be rubbish as I have purchased three times that amount!! (my lidl don't have scales) so what can I do with the remainder?
I can't use them as baking potatoes as the two potatoes are huge and I wouldn't attempt to eat a whole one!!
So some ideas please, as I hate to throw away perfectly good food!!0 -
I often peel and roast sweet potatoes as part of a vegetable roast for dinner, they are lovely

You can cut them in half and the other bit will keep in the fridge fine (for over a week in my experience). They make excellent wedges, a spicy gratin or mash topping for a spicy shepherd's pie.

It's nice in a vegetable stew with a bit of spinach and a few tablespoons of peanut butter, I had an exact recipe once and I remember it was gorgeous, not made it for ages though! Maybe if you google for moroccan sweet potato stew you might find something!0
