Sweet potato recipes, ideas & questions

It was posted on here a while ago and I made it for my one year old - he loved it and now I'm trying to find it again - but of course I can't. Does anypne have the link? Trying to do it for his tea now! It had coconut milk, sweet pots and carrots in, I think.

    Think that may have been mine.
    I throw together lentils, sweet potato chunks, coconut milk some vegetable bouillion and some veggies and cook together, also I add some chilli, and a tablespoon of curry paste to give a nice kick. You can add peas and carrots too. Its yummy x

    I was at my friends the other day and she made this amazing cinnamony sponge cake with bits of sweet potato in (sounds vile but it was gorgeous). I thought the sweet potato bits were peach they were so sweet.
    I'll post the recipe on here as soon as she gives me it. Unless anyone already has one ......

    And presumably this would count as 1 of 5-a-day if you eat enough of it :T

    Hi,
    I really fancy a baked sweet potato for lunch but am not sure how to do this (sounds daft I know!)
    I have some large sweet pototoes and usually have normal baked potatoes - do you cook them in the same way?
    I usually stab them with a fork, microwave for 10 mins then stick in the oven to brown and crisp up a bit.
    Can you eat the skin just like a normal baked potato?

    Sorry for the dumb questions !!!

    Hi

    Treat in the same way as a spud. They are really yummy as home made wedges with olive oil, basil, salt and pepper.

    After baking you could mix in some salt, pepper, a little creme freiche and have with salad

    A friend cooks a sweet pot in with her spuds when shes mashing them - doesn't need butter/milk and she says they taste creamy
